some days i feel like i have it together and other days phone is on 1%, breakfast on the go and serving my toddler french toast with a side of olive oil 💀

just a real life morning as a mom of 3 trying to leave the house and do all the things beforehand. something’s always gotta give though and this day it was definitely hair and makeup over a clean kitchen 🥲

very much rolling with all of the punches over here when things get chaotic✌️

for the moms that are trying to build something whether it’s a business or growing a career, don’t forget about the little eyes that are watching and looking up to us even when it feels difficult to keep going 🥹
motherhood is not easy let alone being a working mom or a mom trying to build a business meanwhile also raising kids.

at the end of the day, my babies will always be my biggest motivation and the reason i never give up 🤍 by @leilaanicuriel

GREEN CHICKEN ENCHILADAS 🤩

INGREDIENTS
•8 tomatillos (green tomatoes)
•1 serrano pepper (had two ready just in case weren’t spicy)
•1 jalapeño pepper
•1/4 of a yellow onion
•1 garlic clove
•1/3 of cilantro bunch
•about 1-1 1/2 cups of water or chicken broth
•salt & didn’t add chicken bullion bc i used the chicken broth & it was seasoned

-boiled tomatillos, peppers and onion until tomatillos were super squishy.
-my chicken was cooked the day prior but i just seasoned 3 chicken breasts (one bone in for flavor) by boiling w/one quarter onion, added salt and veggie seasoning.
-blended boiled tomatillos, jalapeño pepper and half a serrano pepper (to start in case it was too spicy) as well as boiled onion. added broth, cilantro, garlic clove and salt (not too much salt bc my chicken broth was seasoned and i added some of this too about 1 cup)
-blended all together and tasted for salt and spice. if not spicy enough add another half of serrano pepper. i left mine with 1/2 serrano pepper
-get your oil ready (i used olive but any other works), fry tortillas each side a few seconds. enough to get it really soft and manageable
-dip it into salsa verde right after. repeat for 5-10 times depending how many enchiladas you’re making.
-start putting chicken and rolling up the enchiladas
-top them with more salsa, lettuce, sour cream, queso fresco, avocado and fried potatoes

enjoy!! 🫶

-1 tablespoon light brown sugar
-1 tablespoon of maple syrup
-2 shots of blonde roast espresso (or 2 teaspoons of espresso instant coffee if you don’t have an espresso machine)
-oat milk or milk of choice
-half and half

*disclaimer: i like my iced lattes on the sweeter side so feel free to do less than a tablespoon of each if it’s too sweet

In my own experience, postpartum hit me the hardest the first time around. i felt the lifestyle change of going from 0 to 1.
I feel like everyone warned me about the sleepless nights but no one warned me about the mental health aspect of postpartum.

Were you prepared for the mental health challenges of postpartum the first time around??

apparently I thought the best time to lock in would be after having my third child??
or maybe i’m tired of making excuses and not following through with goals i set for myself
either way, now’s the time to go all in on whatever it is you’ve been having in your heart and mind for the longest 🤍

veggie & egg scramble tacos 🌮 🍳

I made 4 tacos with my recipe & you’ll need:
• 1 roma tomato
• 1 mexican grey squash (or zucchini can work too)
• 1/4 of a yellow onion
• 1/2 serrano pepper (or jalapeño pepper)
add as much or as little depending on spice level you want
• corn tortillas
• queso fresco

*saute your onion first until yellow, add in squash or zucchini first as it takes the longest to cook! then your peppers (if adding any) and your tomato & your eggs in at the very end once your veggies are all cooked.
