Peach baked in a sugar crust with verbena and canella berries, lemon verbena ice cream, peach confit, crispy coffee, cascara and verbena tuile 🌱

In this dessert, I confit the peach in a sugar crust infused with verbena, a shell that preserves its juiciness while bringing subtle notes of canella and coffee. Served warm, it opens to reveal a melting heart.

Alongside, a lemon verbena ice cream creates contrasts of warmth and brightness.

A dessert of patience and generosity, a tribute to summer.

MEKONGA CHOCOLATE crémeux infused with coriander, salted peanuts chocolate sauce flavoured with mace

I chose Mekonga cocoa, grown in the Mekong Delta of Vietnam, known for its vibrant, tangy notes that both surprise and delight the palate.
I wanted to bring together two iconic ingredients from the region: peanut, widely loved locally, and coriander, ever-present in savory dishes but rarely found in desserts.

I imagined a fresh and surprising coriander gel, hidden beneath a crisp tuile, to bring an unexpected brightness to each bite.

Then I introduced mace, a spice that adds both floral and warm, aromatic notes—extending the tasting experience with a beautiful retroactive depth.

Each element is thoughtfully placed: the tangy chocolate sets the tone from the very first taste, followed by the coriander gel, crunchy peanut, and that hint of mace.

The balance is just right—freshness, energy, and chocolatey softness come together with elegance.

In this dessert imagined for the Cristal Room in Hong Kong, flavors come together in a subtle and mesmerizing dance. Delicate briny notes, unveiled by naori seaweed, respond to the deep, roasted accents of cocoa nibs. Raspberry, expressed through a palette of textures — airy sorbet, silky confit — reveals an infinite array of nuances, infusing the whole creation with vibrant freshness. Then come the fragrant whispers of savory, marjoram, thyme, and rosemary, releasing their herbaceous and peppery aromas like a distant breath of garrigue. As a final touch, a cocoa nib–infused meringue, light as a cloud, settles gracefully atop, adorned with a delicately sketched floral motif.
