🌊National Seafood Month🌊
Meet the creator behind your dish at Jax LoDo.

It started with a memory and now it’s his motto.

Chef Duane’s Pan Fried Trout is rooted in the Smoky Mountains. Crispy Mountain Trout from the rivers of his childhood, layered with fermented sweet corn chow chow that captures the summer harvest at its peak, rich leek fromage, and Benton’s Smoky Mountain Bacon cured low and slow the Appalachian way. Finished with pickled heirloom tomatoes…bright, tangy, and grown close to home.

Nothing wasted. Everything intentional. Simple, honest flavors that prove the motto stands true.

Are you as intrigued as Chef @leonduanewalker is?

Enjoy the flavors of the mountain ranges at Jax LoDo this month. 🏔️🎣
