Hong Kong bubble waffles anyone? These are the best. My son loves them with strawberry jam or whipped cream and my daughter loves them with sprinkles. Inspired by the incredible Joy at @ohjoy, she suggests using the mochi cake mix from Trader Joe’s! Library haul today and trying to stay distracted! Secret of the Fortune Wookie by @tomangleberger is a book three in a hilarious series my son LOVES!!! Great for kids that love Star Wars, perfect for grades 3-7, witty and creatively written. Getting a few of the later books for Christmas, shhhh, don’t tell Makoa. He’s a big FAN of cheese curds. Did you know they squeak when you eat them? The protein network found in cheese curds is woven so tightly, it actually rebounds from our teeth as we bite, creating a squeak. Lunch bento box is @ekobo_official . Before and after today. This weekend we visited an apple farm and picked nearly 20 pounds of apples. The kids loved it! Yesterday, I defrosted store bought pie dough, cut them into circles and made apple hand pies. Apple pie filling was super simply and included apples, lemon juice, coconut oil, cinnamon and a pinch of salt. So simple and super sweet. As you can tell, a hit with my son. Lunch has really been tricky finding things the kids will actually eat these days. So sometimes we make 🍙 salmon onigiri which is always a fan favorite for my son. We buy the seaweed wrappers at our local Japanese market (also available on Amazon with the triangle, silicon molds) where they also have the best snack selection. We always grab a handful of new snacks that we have no idea what they taste like just to explore! Other items of interest: tomatoes and apples with lemon juice (prevents browning) and cinnamon. Ready Player One. A world at stake. A quest for the ultimate prize. Are you ready? Described as Willy Wonka meets the Matrix or the grownups Harry Potter, this book is quick moving, delightfully fun and an addictive read. Totally recommend it! Lunch was a buffet for my littlest who has been challenged by the lack of structure so we packed it together and added all the things she loves - strawberries, leftover bacon, humus, dried @froghollowfarm peaches, a Persian cucumber and an 🍊. When I was a kid I had my first chocolate covered banana at Knott’s Berry Farm in one of those candy shops that is so packed full of candy, you can’t turned around without knocking something off a shelf. Inspired by that memory, I froze a couple bananas on sticks, then dipped in a homemade magic shell. Magic Shell Recipe: 1 cup chocolate chips and 3 tbsp coconut oil. It’s so much better than the stuff you can find at the store and the kids love it. Works great on anything cold that needs a crunchy, chocolaty shell. Quarantine eating has been tricky for my 6 year old daughter. Some days she eats everything in sight, but most days she’s very, very selective about what she chooses to eat since the days are so unstructured and she’s often left to fend for herself when we’re on zoom calls for work. Today however, we decided to pack her a bento lunch with lots of options and it was a success. Creating a little normalcy could help if your little one is needing structure. It’s just like making kimchi but for fizzy veg. Lactose-fermintation is the process by which bacteria break down the sugars in foods and form lactose acid. Luise at the most fabulous @luisegreenkitchenstories recommends a 2% sat mixture, then give it time. Taste along the way and you’ll know when it’s ready. Looking forward to ping cauliflower!
