Lamb ragu stuffed onions

Some of you asked how this dish came alive so I am sharing the story: @1017alix made this slow cooked lamb shoulder, usually we make a traditional stuffed onion with rice and ground meet but it’s nice to make it from ragu, let it cool down and stuff the onions with it. And then I wanted to add a nice sauce, we had spinach so we just blended them with water, tahini and lemon. Its the balance of all the flavors, the spicy, the sour, the bitter and the sweet so it was kind of perfect. by @lev.nyc

Yesterday this was our kitchen and I think we are actually made to cook like this. 
We wanted to do the roast beef and they wanted to do something big so we smoked fish, we made onion and hot pepper necklaces. The sauce for the swordfish is capers, olives and raisins. We wrapped the vegetables inside clay we smashed potatoes, we stuffed bread, we made sage anchovy tempura and we hung grapes on the weeping willow. by @lev.nyc

New York Street Cooking
The action of lighting fire on a side walk in New York is very exciting and we try to do this as much as we can. Putting something so primer and so naturally powerful like fire in the big crowded, man-made city brings us to cook our best food, it can be very simple in preparation because the background, the canvases is so perfect and so contrast to the cooking so it makes is easy to shine. You never know if the police will come and close you down, some strangers can pass by and get involved, you can get rain or strong wind or too much sun or snow…. All of this helps to pay attention to all the details necessary, it keeps you sharp and alert and this is what you need when you cook. by @lev.nyc

Tomorrow (Saturday) we’re cooking a very summer menu, keeping things as alive and simple as possible. What excites me is the meeting point of all the cooks to see how they recreate the menu with their own hands and how it transforms into the dish. I’m also excited to find the best watermelon, that’s a good challenge in the city. And the fried calamari I never have enough of it and it’s never boring for me. We also have lamb kebab we’re getting really good meat from Halal on Smith. We mix lamb belly with lamb leg and herbs. Can’t wait to see you. 247 Hancock st. from 2-7pm by @lev.nyc

When you have quiet, processes tie up in a natural way. The challah was supposed to be straight but the table and the pond said round. Nothing was planned except making dough. Inside the bowls we put chicken liver we made with sasso chickens we got for the next night’s dinner. Like chopped liver but French.

The thing I liked the most in this dinner was the wind. And it felt like cooking on top of the world. We weren’t allowed to make fire or bring gas so we vacuumed and blanched fish, made gaspacho à la minute,  bruschetta with smoked fluke and kale from @brooklyngrange cold watermelon we dressed it with a lot of crazy herbs I never seen before. For desert we made an almond cranberry tart I’m really proud of. Thank you @substack and @careofchan by @lev.nyc
