The word “confit” comes from the French verb confire, which means "to preserve." It’s a classic French cooking technique where meat is slowly cooked in its own fat at a low temperature. The result is rich, succulent, extra delicious meat that melts in your mouth.

Want to give it a try? Our Duck Confit (Canard Confit) is served with lentils, kale, sweet potato purée, and a peach-ginger reduction. Grab a reservation at levoltaireomaha.com/

Fun fact: Confit was originally created as a method to preserve meat, like duck or goose, for months without refrigeration by storing the cooked meat submerged under a hardened layer of fat.

While duck confit is perhaps the most common example of the modern-day technique, chefs also use it with other ingredients like garlic or tomatoes to concentrate their rich flavors.

Thanks to follower Angie Mumford for suggesting this term! Is there a French cooking word or technique you'd like to learn more about? Let us know in the comments!
