Hi IG, it’s been a while since my last post. The latter part of 2020 was a bit of a blur — filled with a whirlwind of emotions — but I’m still here, cooking through them all! In December, we were incredibly fortunate enough to escape the NY winter. And after two weeks of managed isolation (bravo NZ), I’ve been enjoying the summer down under and tearing through @cecileapilkington collection of @dishmagnz magazines. Last night’s dinner from the latest issue was roasted eggplant & tomato salad w/ mozzarella — and is one I’ll be taking back with me to the NY summer. 🍅🍆🧀

How do I get the co-worker to eat tofu? Smother it in this delicious peanut miso sauce by @yewande_komolafe for @nytcooking. Last night a rice bowl, today a salad w/ cukes, radishes, little gems & farro. Per the co-worker, today’s lunch was “surprisingly filling.” .

Bánh mì inspired rice bowl for today’s #wfh lunch with @localrootsnyc pork belly, daikon & carrots. I used @tyna.hoang method for marinating & roasting the belly (find the video on her highlights! Only wish we had those baguettes 😛). Here’s to a short week! .

We’re expecting a veggie delivery this week so today we had leftover soup and a throw whatever’s in the fridge on top of lettuce side salad. I asked the co-worker what he thought of the preserved kumquats, “I can’t really taste them” but then he said the salad was “refreshing” so I think he just didn’t know what he was tasting! 😉 .

The co-worker is baking again. His best sourdough loaves yet! So today we’re keeping it simple. Avocado toast w/ a six min egg, pickled onions & chile crisp.

Leftovers for lunch today so here’s a photo of this past weekend’s pandemic baking project: @csaffitz rhubarb custard cake 😛 .

I had the crazy idea of packing up the car with the co-worker and the dog and just driving down to TX. This lead to an Air BNB rabbit hole looking for homes with a pool in Austin/San Antonio/Houston...any place near friends and family even if it wouldn’t necessarily be possible to physically hug said friends and family. Sigh. Instead, I made @rick_andrew_martinez chicken tinga tostadas with @tacodeli salsa doña for lunch, which was almost like being in TX. Almost. .

I was at a loss of what to do with these @localrootsnyc turnips as I’ve never purchased or cooked a turnip before. 🤷🏻‍♀️ In almost perfect timing, @saladforpresident posted a turnip how to on her IG stories! So today we have black sesame roasted turnips (I didn’t have togarashi and on a whim decided to add miso). Finished with a squeeze of lime & a sprinkling of cilantro & scallions. The co-worker went into a story about how “turnips use to be pigs food, food for the poor (in ye olde English days) but jokes on those richies because turnips are delicious!” .

Is it a bit extra to have clams & white wine ramp butter broth for a weekday #wfh lunch? Probably. But when you’ve been stuck at home for who knows how long, sometimes it’s nice to be fancy on a Tuesday. 💁🏻‍♀️ .

Fish delivery day = oyster happy hour! These Wellfleets were such a special treat. It’s going to be a good week. Thank you @pierlessfishbk! by @lisasbkkitchen

Closing in on week 9 (week 10?) in isolation. It’s been a weird one. A little emotional at times but the Hawkington’s are just doing the same. Coffee. Smoothie. Walk dog. Work. Lunch. Work. Afternoon tea (but really coffee). Work. Trying to fit in a home workout. Happy hour. Take dog to roof. Dinner. Sleep. Repeat. Some days the routine is harder than others but trying to remember how fortunate we are during all this. Anywho, so today’s #wfh lunch: blackened harissa chicken, beautiful pea shoots from @lanisfarm (PSA: one of my fav @unsqgreenmarket vendors who are now offering home delivery), feta, olives, red onion, crispy chickpeas, squeeze of lemon, drizzle of olive oil, s&p. The co-worker didn’t have much to say today but he did do a little dance while humming “yum.” 😊 .

Carrot, parsnip & coconut soup w/ coco chili crisp. I wasn’t sure what I was going to do with the large bags of root veggies from our CSA (thanks again @localrootsnyc!) so decided to just wing it. Sautéed onion & garlic, threw in the rough chopped veggies, added a can of coconut milk, some chicken stock, dash of fish sauce & a few tbsps of red curry paste. Simmered it for an hour or so then blended it up! The co-worker apparently loves when I wing it 😋 .
