Make a quick lunch with @itsginabruno Turkey and Zucchini Bites 🩵1 pound ground turkey1 small zucchini, finely grated + squeezed dry0.5 cups whole wheat breadcrumbs3 tablespoons parmesan, finely greeted1 egg0.5 teaspoons garlic powder2 tablespoons of olive oilPreheat and prep: Preheat oven to 400°F. Line a baking sheet with parchment and drizzle with 2 tablespoons olive oil.Set up your dredge: Whisk 1 egg in one bowl. Mix 0.5 cups whole wheat breadcrumbs, 3 tablespoons parmesan, finely grated, and 0.5 teaspoons garlic powder in a second bowl.Mix turkey and zucchini: In a third bowl, combine 1 pounds ground turkey and 1 small zucchini, finely grated and squeezed dry. Mix well so the zucchini is evenly distributed through the turkey.Coat the nuggets: Form the mixture into small nugget shapes. Dip each in the egg, then press into the breadcrumb mixture until well coated.
