Smoky Portabella Mushroom Fajitas 🥰🔥✨

Started off by washing and slicing the portabellas. Then added my seasonings. I used salt, pepper, smoked paprika, cayenne pepper, ginger seasoning and hatch pepper seasoning. I love spice, use what works for you.

Added in 3 fresh squeezed organic limes and about a tablespoon of coconut oil.

Mixed in red and yellow bell pepper and red onion.

Let it marinate for about 15 minutes while I prepared my quinoa and chickpea sides.

Once I was ready, I added the mushroom mix to my pan. Cooked it on medium- high heat. So the mushrooms can brown and the onions can caramelize. Turned out sooooo 🔥🔥🔥 taste was on point!

I heated some tortillas in the same pan from the mushroom to soak up the flavors. Cut up some fresh lime, lettuce, tomatoes and cilantro.

Served it with the quinoa and chickpeas sides. So amazing! So quick and easy. It took me about 30 minutes to complete the whole meal!

Made dinner from a recipe I found on Instagram, turned out soooo amazing!

Cooked some red onion in @dolphinseamoss
Added some spices and cherry tomatoes
Let that simmer then blended it to a sauce
Added in some chickpeas
Simmered on low for about 10 minutes

While that was simmering, made some almond flour empanadas stuffed with mushrooms and collard greens

Completed the meal with some coconut yogurt, hemp seeds and vegan Parmesan and a few bell peppers.

I’m in love and amazed at how quick this super delicious meal came together ❤️ by @livewithkrystal
