Not professionally trained I fell in love with cooking (especially baking) a million years ago. I began by trying my poor ma’s patience for so many years in her kitchen- in reality I have a feeling I still do! Now, she helps me in mine.

When working for the NHS I’d come home stressed and cook my frustration away. When the time came that I needed to leave because of health problems I found I cooked more. My chap referred to my extreme baking as an obsession and begged me to sell what I was baking. We were disappearing under the weight of baked goods. I pottered off to the local Agricultural show and a baker was born. 

I make all manner of pastries and bread from the bakery in the midst of farm land in west Dorset.

Just watch the pour…Simple, seasonal and ready in under 20 minutes.

These Fig Slices are the kind of effortless bake that feels far more indulgent than it has any right to. Sweet marmalade, ripe figs and our award-winning Organic Puff Pastry.

You’ll need:

    •    Dorset Pastry Organic Puff Pastry
    •    Marmalade
    •    2 figs, sliced

Method:

👉 Cut two pieces of pastry to approximately 12cm x 15cm.
👉 Spread marmalade evenly over each piece.
👉 Slice the figs and place on top of each sheet.
👉 Place in the air fryer at 190°C for 8 minutes.
👉 Halfway through, turn over and cook for a further 7 minutes until golden.

Autumn on a plate and surprisingly simple to make.

These Courgette, Lemon & Mascarpone Pastries are everything we love about this time of year. Crisp, golden Dorset Puff Pastry cases filled with a creamy garlic and lemon mascarpone, topped with tender courgette and a dusting of Parmesan.

You’ll need:

    •    1 sheet Dorset Pastry Puff
    •    100g mascarpone
    •    1 tsp garlic paste
    •    Zest of 1 lemon
    •    ½ courgette, thinly sliced
    •    20g Parmesan, grated
    •    1 egg, beaten

Method:

👉 Cut 8 pastry circles or ovals. From 4 of them, cut a smaller circle out of the centre.
👉 Place the solid bases on a lined baking tray. Brush with egg wash and top with the cut-out rings, lining up the edges.
👉 Egg wash the tops and chill for 10 minutes.
👉 Mix together the mascarpone, garlic paste, lemon zest, salt and pepper.
👉 Spoon the mixture into the pastry cases.
👉 Arrange courgette slices on top and sprinkle with Parmesan.
👉 Bake at 210°C / Gas 7 for approximately 20 minutes until puffed and golden.

There is nothing quite like a proper homemade Chicken Pot Pie - golden shortcrust pastry, a rich creamy filling and that moment when you break through the lid.

You’ll need:
    •    Dorset Pastry Shortcrust
    •    30g cooked onion
    •    60g cooked mushrooms
    •    350g cooked chicken
    •    Approx 100g fresh cream
    •    Mixed herbs, salt and pepper
    •    1 egg, for glazing

Method:
👉 Line 3 deep pie dishes with the pastry and cut matching lids.
👉 Layer the onion, mushrooms and chicken to the top of each pie.
👉 Pour over the seasoned cream.
👉 Brush the lids with egg, place egg-side down, press and seal the edges.
👉 Glaze the tops and pierce to vent.
👉 Bake at 210°C / Gas 7 for approximately 25 minutes until golden.

The perfect bake as the evenings draw in.

As beautiful to look at as they are to eat.

These Apple Blossom Pastries are the perfect autumn bake - sweet marmalade, tender apple and a jewel-bright blueberry centre, all wrapped in golden Dorset Puff Pastry.

You’ll need:

    •    1 sheet Dorset Pastry Puff
    •    1 apple
    •    3 tsp marmalade
    •    3 blueberries
    •    1 egg yolk, beaten
    •    Icing sugar

Method:
👉 Cut the pastry into 3 equal squares.
👉 Place 1 teaspoon of marmalade in the centre of each square.
👉 Core the apple and slice into 1cm thick rounds, placing a piece on top of the marmalade.
👉 Make a small cut in each corner of the pastry, pull over the apple and tuck into the centre.
👉 Place a blueberry in the middle.
👉 Brush with beaten egg yolk.
👉 Bake for around 20 minutes until golden brown.
👉 Dust generously with icing sugar.

This week is actually a 3 day week - I’m off to @melplashshow which I love! This was the first show I ever did when my partner told me to go & sell what I made! 

For me it’s always so important to get it right for this show beyond all others … 

Today I have made 19 kgs plain pastry, 60 kg cheese pastry, 3 kg sweet pastry, croissant ferment. Lime curd, raspberry curd, 70+ frangipane & bakewell tarts, 50 slices millionaires shortbread, 40 slices brownie, 4 huge gala pies, 50 sausage rolls, digestive crumb. Day one done! …. Now - I shall go and lie down in a darkened room … til tomorrow

Brie, onion marmalade and golden puff pastry. Need we say more?

These Brie & Onion Marmalade Pastries are effortlessly elegant - the kind of thing that looks like you spent hours but takes under 30 minutes from start to finish.

You’ll need:

    •    1 sheet Dorset Pastry Puff
    •    1 egg, beaten
    •    120g onion marmalade or relish
    •    250g brie, sliced
    •    A few chopped walnuts (optional)

Method:

👉 Roll out the pastry and cut into 6 equal rectangles.
👉 Brush the edges with egg wash.
👉 Spoon onion marmalade onto each piece and top with slices of brie.
👉 Bake at 210°C / Gas 7 for 15–20 minutes until golden and the cheese is melted.
👉 Sprinkle with chopped walnuts after baking, if using.

Looking for some easy weekend baking? Save this recipe 📌

🍓 Strawberry Thumbprint Cookies

You’ll need:

    •    Dorset Pastry Sweet Shortcrust
    •    Strawberry jam
    •    Green icing or green food colouring

Method:

👉 Roll out the pastry to approximately ¾cm thick.
👉 Cut out decorative circles and place on a lined baking tray.
👉 Prick a decorative border around each biscuit using a skewer.
👉 Use your thumb to press a strawberry-shaped indentation into the centre of each biscuit and fill with a small spoonful of strawberry jam.
👉 Bake for 12–15 minutes until golden brown.
👉 Decorate with green icing to create a stem. 🍓

Today I took my butt to @maidencastlefarm and checked out the sunflowers. I’ve been working with Hazel for probably 4 or 5 years now making sausage rolls, cheese straws and this year cheese & tomato tarts. 

Blimey this year - the flowers are stunning. Stunning. Really stunning. You look through a sea of these delicious butter yellow heads heavy with the weight of the sunshine and the world lights up! 

They back on to maiden castle (no surprises there) which is an Iron Age fort - remarkable in itself, worth a trip and free to march round.

The one woman wonder that is Hazel has sown and cultivated an idea that has grown into this amazing charity event for @dorset_county_hospital_charity 

This year the aim is to hit the £100,000 total that will have been donated and I think she’ll do it! Hazel has very personal reasons for this effort - have a look at her feed to find a very personal and completely heart warming account.

Where else can you take the kids out, watch them enjoy the activities, eat an ice cream or have a picnic, buy a locally produced souvenir all for a few quid in the school hols?

A bounty of buds makes me think you’ve got at least a week to get yourself over there. Take a moment, grab a seat and just breathe in the beauty that @maidencastlefarm have created.

POV: when you put a baker and flower farmer together…

…and suddenly an apple tree becomes a team sport. 😂

Me (Sophie) + Lizzie from Lizzie Baking Bird = one shakes the tree, one collects the apples, and Claire gets the evidence. 

Because apparently when you put a flower farmer and a baker together, the logical thing to do is go apple picking… but make it chaotic. 

We’re already thinking about what these apples could become… I’m hoping Lizzie will let us taste!

Save this recipe for the next time you’re craving something sweet 🫐

This easy Blueberry Puff Pastry is the perfect summer bake - crisp, buttery layers filled with juicy blueberries, a hint of orange and a crunchy nut topping. Made with our ready-to-use Dorset Pastry Puff, it’s simple to make and even easier to enjoy.

You’ll need:
2 sheets Dorset Pastry Puff
300g blueberries
Zest of 1 orange
2 tbsp sugar
50g chopped nuts
Icing sugar, for dusting

Method:
👉 Roll one sheet of pastry to approximately 25cm × 40cm and place it on parchment paper over a cold oven shelf, allowing it to settle into the grooves.
👉 Scatter the blueberries evenly over the pastry.
👉 Sprinkle over the orange zest, sugar and chopped nuts.
👉 Roll out the second sheet and place it over the filling.
👉 Bake at 210°C / Gas Mark 7 for 20–25 minutes, until beautifully golden.
👉 Carefully turn upside down once baked and finish with a generous dusting of icing sugar.
