It was lovely hosting a 45th Birthday party for Henry! I impressed myself with my not so perfect cake. The girls had fun decorating cupcakes too.

Here is our Chicken Fajita loaded nachos.

It is a special meal for me and my family. There is no other way to eat without all sitting round the table. A family sharing kind of meal. My girls will not only share the meal but share everything about their day at school. That's what's important to me, giving the girls a safe space to talk while enjoying a yummy meal.

I seasoned the chicken, peppers and onions with @maggi_uk air fryer fajita seasoning, and layered nachos with salsa, the fajita chicken and veg, cheese and baked. Then added fresh tomatoes and avocado, topped with soured cream. A lovely midweek meal that leaves smiles on my family's faces.

Everyone knows I love to cook, I just don't like cleaning very much as you can see. I really don't like the other oven cleaners with the strong chemicals, so I decided to try Astonish Oven & Grill cleaner.

How easy was that! I went from having an embarrassment of an oven, to a shiny clean oven in 15 minutes. I'm ready to get on with my cooking again now.

Chicken Shawarma Skewers

These were easy to make and full of flavour. The chicken can be marinated and stored in the freezer. This speeds up your meal when you don't have much time. Just defrost and cook. They can be made in the airfryer or oven and the family really enjoyed the skewers with tzantiki and flatbread.

We tried out the sausage traybake from the Batch from scratch planner. We cooked this fresh but you can prepare the uncooked ingredients into freezer bags, then defrost, and cook for a midweek meal when time is short.

We love a one pan meal, less washing up and the kids really enjoyed this.

Today we tried out a quick lunch from the Batch from Scratch planner book. Pizza using ready made dough and I let it kids decide their toppings and of course it was a lot of olives. You can prepare these ahead and freeze the uncooked dough along with your toppings and cheese and defrost and prepare when you are ready. Great when you need a quick lunch for the kids.
