BUTTER BEAN LASAGNA🍝🍝

Ingredients

1 Onion

1 garlic clove (crushed)

2 tbsp tomato puree

2 tsp smoked paprika

1 tsp normal paprika

Sprinkle of cayenne pepper

2 tsp mixed herbs

1 jar bold bean queen butter beans (with stock)

1 tin chopped tomatos

250ml veggie stock

8 lasagna sheets

Creme fraiche and basil to serve

1. Into a warm oiled pan add your onions and fry until softened, add your garlic and fry for a few more minutes.
2. Add tomato puree and leave to fry for 1-2 minutes.
3. Add your spices and stir until fully combined, adding your beans and following the same process, stir until fully coated.
4. Pour in your tomatoes and stock, bringing to a low simmer before adding your broken lasagne sheets.
5. Ensure to separate the sheets with a fork whilst they cook as they will stick together, also ensuring to stir regularly as the sheets may stick to the pan also.
6. Let it simmer until thickened up, around 15 minutes.
7. Once it’s nice and thick you can add in your crème fraîche, I used 3 tbsp but add to your desired taste.
8. Serve with basil or cheese.

What I ate then vs what I eat now after learning how to break the cycle and heal my gut!

It took a minute (by minute I mean 5 years) but we finally got here!! I’ve made so much progress but can’t help feel sad for the girl that has dinners like this every night❤️‍🩹

I ate this lunch for about 4/5 years. I thought the protein made it a great option!!! And I wondered why I had chronic stomach issues

I found a way to add more fibre but still have something super quick and easy! I’ve been adding crispy chilli oil to me eggs and it’s👌🏻

These things were like crack for me, I’d eat about 6 without even coming up for a breath😭 malted milks are up there with some of the most sugary biscuits and I was ADDICTED

A day can’t pass without having my @feelreformed matcha. Full of everything you need to get you through an afternoon slump🫶🏻

Dinner was always something so sad :((( looking back I can’t believe I ate meals like this and wondered why I binged so badly all the time

Now I make something that actually makes me happy, something I enjoy cooking and eating!! Even if I was over my calories for the day, I will still have my dinner as planned. Gets me right back on track and will avoid me over eating again the next day by @loseitwithlib_

How I made this unrealllll Butter Bean Curry🌶️🌶️

1 jar of Queen Butter Beans - with their bean stock

1 onion finely chopped

4 garlic cloves, finely grated or minced

1 tsp ginger, fresh or puree

1 tbsp tomato puree

2 tsp ground cumin, or 1 tsp cumin seeds, gently crushed

2 tsp garam masala

2 tsp ground coriander

1 tsp ground turmeric

½ tsp chilli powder or chilli flakes

1 x 400g tin chopped tomatoes

1-2 tbsp greek yogurt or vegan alternative

Handful of fresh Coriander

Rice to serve

- Heat oil in a pan over medium heat. Add onion, cook 7-8 minutes until softened. Add garlic and ginger, cook 2 more minutes until fragrant.
- Add tomato puree, spices, and a splash of water. Fry a couple of minutes until deep red. Pour in tomatoes with a pinch of salt and bring to a low simmer for 5-7 minutes
- Add butter beans with their liquid, simmer gently 3-4 minutes to warm through. Add spinach, cook until wilted.
- Add greek or natural yoghurt to the top of your curry, you can add more and stir in right at the end if you prefer a super mild flavour
- Serve with rice, naan, or flatbread. Top with coriander

Is it too early for a mid week mini roast?

Roughly 4 portions

Chicken Mince (I used 500g here but 300g would be plenty)

Sage & Onion Stuffing

2 leeks

savoy cabbage (removing stems)

250ml chicken stock

120ml single cream

 1 tsp djon mustard

1 tbsp plain flour

salt & pepper to taste

1. Make up your stuffing mix as per packet instructions and then leave to one side to cool before touching
2. Add you chicken mince to the cool mixture and mix till fully combined
3. Wet or oil your hands before rolling the mixture into uniformed balls (you may need to wet hands inbetween as stuffing mix is super sticky lol)
4. Place onto baking paper and into the oven at 200c for 30 minutes

For the creamy cabbage & leek

1. Finely chop your leek and cabbage, add some butter to a warm pan and then your greens until softened.
2. Add half your chicken stock and plain flour, let that bubble away for 3-5 minutes, stirring occasionally.
3. Add in the remainder of the stock, djon mustard & single cream and bring that to a low simmer for around 5 minutes.
4. Add salt and pepper to taste

I served mine with mash and chicken gravy and it was absolutely divine!! by @loseitwithlib_
