The time is near.

Today marks 15 years since I clocked in for my first shift in the service industry. Through those years I have bussed tables, been a dishwasher, a host, an expo, a prep cook, a line cook, a barback, a server, a bartender, and a manager. The first 9 years I viewed it as just a temporary industry to work in; that I'd move on to a "real job" sooner or later. I should have known better considering it's practically in my blood. My grandpa worked in a bar at 9 years old, my grandma served tables until her 60s, my uncle is the most passionate chef I've ever had the pleasure to work for, and my sibling is right on my tail for years worked in the industry.

The most badass busser I ever worked alongside took me out after work to celebrate his quin-service-anera / 15 years working in kitchens. We worked at Blackbird in Chicago at the time, alongside serious service lifers. Beautiful middle aged servers drove their luxury cars in from the suburbs each shift. I remember thinking how crazy it is that people can do this shit for that much of their life, that they never grew out of it. This day is significant to me because it's an arbitrary milestone I never thought I'd come close to when I went out with Jose and the other back-staff. The last several years this 15 year mark became a day I both dreaded and looked forward to celebrating.

Working in the service industry has ingrained itself into the very fabric of my identity for better or for worse. 15 years of constantly learning, gaining new skills, being challenged in new ways, and simultaneously forging my closest human bonds and irreparably devastating relationships and friendships. If I've ever bussed your table, if you've ever covered my shift, if we've ever shared a shifty together and talked shit: thank you for contributing to who I am today.
