Some of my favourite moments on a shoot aren’t the planned frames. They’re the reactions. At the @loveabbeef Ranch Tour Experience in September, I got to watch Andrew Moore and his family see ranch life up close. Saddling up with the crew @plateaucattle (John Smith and Laura Laing), riding through the hills, and ending the day at a table set with Alberta beef prepared by Chef Jeremy Ouellette of @saintvyyc When you grow up around cattle, it’s easy to forget how much there is to take in. Watching a family experience it for the first time was a good reminder that everyday on a ranch is pretty extraordinary. Cooking Basics: Steaks (swipe 👉 to read more) There are a lot steak cooking videos out there but this is the way I do it. Here’s a few tips: It always starts off with choosing the great quality and cut of beef, today, it’s the top cut, the Ribeye. I like to leave my steak uncovered in the fridge for a good 6-8 hours just to dry out the surface of the meat. This gets rid of any excess moisture and helps develop that amazing crust and caramelization we all love. Next, I take it out 15-20 mins. before cooking. Why? this brings the steak to room temperature, resulting in a much more even cooking. If you cook the steak straight from the fridge, the outside cooks and develops a great crust but the inside might still be cold and undercooked. By the time you hit your desired internal temperature, the outside is already burnt and overcooked. Now the cooking part, but before hitting the pan, let’s talk seasoning. There’s a lot of ways and preferences on what to season steaks with, I just use good ol’ salt and pepper. Too simple? But to me that’s all it needs, quality meat has great flavour, it does not need to be doused with complex rubs and marinades, don’t get me wrong it’s great to do sometimes, but be careful, you want to enhance and complement the natural flavours of the meat, not mask it, a simple S&P can do just that no problem. How you cook your steaks, I your choice, I do a simple pan sear (or grill sometimes), if you are pan searing, make sure your pan is screaming hot (smoking) before you put the oil in. Oil tends to burn if you start heating it from a cold pan, also a little oil (about 1-2 tbsp) when searing meats, too much oil in the pan can lead to boiling rather than searing the protein. To add moisture and some accent flavour while in the pan, I usually add butter and herbs and baste it to incorporate the flavours into the meat. For doneness, aim for 135-140 F internal for medium rare, this means taking the steak of the pan at 130F and set aside to REST, this is a crucial part as meat continues to cook once they are off the heat, the residual heat as we call it, cooks and slowly brings the temperature up to 10 degrees more.
