Wow I can’t believe my 1st children’s book is finally LIVE! I wrote this story after a walk with another new mom when my 1st son was born. I was talking about how busy moms always are but the expectation to be there for our children emotionally is a constant. 🐝

Motherhood has strengthened me and I’m so thankful I was able to share a little part of my journey being a mama so far. 💕

It’s official…we have a blog! We are technically a day late but I made daddy stay up late to finish it because the information is just too important to wait on 😉🌱

So thankful to have a wonderful husband to help me on the #LowToxTots journey and so lucky to be a mama to the most perfect boy that motivates me beyond measure 💕

The blog is a work in progress, just like we all are. My hope is it will grow organically (pun intended) because parents/future parents/people feel the information is helpful and requires action. Last night I realized the highlight of my swimming career.

The highlight of my swimming career was getting to be a part of yours @stephnicolepeacock 💕 🏊‍♀️ I’m so thankful I was even asked to attend the North Carolina Swimming Hall of Fame ceremony to watch my best friend get inducted. Without swimming bringing us together, I wouldn’t have a best friend I absolutely cherish and a second little family outside of my own.

Steph, I’m so so proud of your accomplishments in and out of the pool and I’m so glad you met your incredible best friend and husband @samsons_farm through the sport as well. Huge shoutout to the Peacock parents who raised two amazing people who are far more than “just swimmers”.

Ps. I think it’s pretty telling when @cullenjones chooses to sit at YOUR table despite being surrounded by so many other swimming “greats” in the room that night.

To my network, & not just my Florida folks...I’m reaching out to invite you to support an upcoming charity golf tournament being held in honor of my dad, Rocky Cotugno. He unexpectedly passed away on 7/15/26, and prior to his passing he had wishes of just getting to play a few more rounds of golf. He did not want any kind of funeral or service because that's the kind of guy he was. However, I want to honor his wish for more time on the greens by playing a round for him while raising money to donate to local organizations in our area, since giving and uplifting others was his specialty.

My dad was a proud member of our small but big Cape Coral community for more than 30 years. He built the home my little sister and I grew up in and as a roofing contractor and general contractor he helped build countless other homes and buildings throughout southwest Florida (& throughout the country). While he was a rough around the edges kind of guy, once you really knew him you knew he loved helping people and loved his family more than anything. He worked harder than anyone I've ever known throughout any and all setbacks he faced, all for his family.

While I have so many memories of being on the golf course with him and even playing in his all-men scramble at Royal Tee (now Cape Royal) quite a few times, what I remember most is how big his heart was. I lost count of the number of families my dad invited to stay in our home when they needed a safe place to stay or the number of people he helped fix broken things. He helped so many individuals get their name out when starting their own small business and really was a pro at relationship building, because he truly cared and wanted to see people be successful.

To celebrate his legacy, we are hosting a charity golf tournament at Cape Royal Golf Club on 10/31/26 and we are seeking participants and/or sponsors to help make the event a success.

Helping write my daddy’s obituary was not something I saw coming anytime soon. It was not his time in our eyes but God has a plan and we are all on board.

If you knew my dad, Rocky, you knew he loved helping people. You also probably were a little scared of him at first but then realized he was just a big teddy bear that just adored his family and wanted nothing but the best for them. He worked harder than anyone I’ve ever known or will know, and no one can argue with me on that. I’m so thankful and blessed to have been by his side to the end. My hopes of helping him even a hundredth of how he has helped me and my family over the years were all I had in my mind through it. His grandbabies will miss him but we will keep his legacy going, despite him wanting zero attention ever for his good works.

I’ll see you for some golf in heaven eventually, daddy 💕

I am organizing a golf tournament in his honor since that was his passion and all proceeds will go to local organizations that my parents supported, because he was a giver through and through and helped build this city (literally and figuratively) for over 30 years. So where in the world have I been? Well let me tell YOU. It takes a surprise twin pregnancy and an active toddler to make you the busiest/most tired you've ever been in your entire life. It also takes a surprise twin pregnancy and an active toddler (& an amazing husband/daddy) to make you feel more love than you've ever felt in your entire life. We officially made it ONE year with twin girlies, Gracie & Giselle, and cannot wait to keep watching these little wildflowers grow. Espen has been the BEST big brother and God has truly blessed us with these kids. I'll be slightly re-branding this account/my blog eventually (it took me 4 months to find time to shave my legs so really...time is limited) but for now...if you need positive parenting tips I'm your girl after this last year. And just like in 2020, I’ll be peacing out and getting off socials 😀 I truly hate social media and it just doesn’t align with my values. I deleted it in 2020 for these same reasons.

I got back on socials recently when I felt I should share my experience as a new mama navigating the vegan and non-toxic space with her family. I wrote my first blog and e-book but honestly do not want to commit the time to grow it because I’m just loving the 1:1 time I’m getting with my family. Socials just take away from that for me so I’ll be leaving this account active this time (instead of deleting completely like last time lolz) to keep my resources up for anyone that happens upon them.

Breakfast and snacks with a toddler don’t have to be hard.

Here are two easy ways I make sure my toddler is full and gets loads of protein and vitamins throughout the day. These two options are able to be prepped the day before which is a lifesaver for early morning wakeups!

Overnight oats (breakfast):
1 cup rolled oats
1-1.5 cups of soy milk
1 tbs chia seeds
1 tbs of maple syrup
-over 24 grams of protein, over 8 grams of fiber, and loads of necessary vitamins for a growing babe.
-add peanut butter or another nut butter for extra calories and flavor.
-I use a super clean soy milk (literally organic soybeans and water) for most of E’s meals that include a milk.
-let sit overnight in the fridge

Chia seed pudding (snack or breakfast):
4 tbs chia seeds
1 cup soy milk
1 tbs maple syrup
-over 12 grams of protein, over 10 grams of fiber, and loads of necessary vitamins for a growing babe.
-add frozen fruit for extra nutrition and flavor and their teething mouths will also love it!
-I like to mix up the soy milk we use because the Whole Foods organic unsweetened soy milk is fortified with extra vitamins which growing babes benefit from.
-mix after 5 min in the fridge then let it set for at least an hour before eating (I let mine sit overnight in the fridge)
