Tomorrow, June 3rd will be my last day after more than three years behind the bar of @thecambridge_paris .

Over the past few years, I’ve had the opportunity to work alongside some incredibly talented people, collaborate on exciting projects, and learn an immense amount about hospitality, attention to detail, consistency, and teamwork.

Thanks to this job and the opportunities it brought, I’ve been lucky enough to visit different countries, discover new cultures, and meet amazing people from all over the world.

I’m especially grateful to @hugo_gallou and @hyacinthelescoet for trusting me three years ago and for creating an environment where people are encouraged to grow, learn, and develop.

Long live The Cambridge Public House ! by @lucasjousss

I rarely post cocktails here, even though it’s been a big part of how I’ve made a living for several years now.

One of the many advantages of working at @thecambridge_paris is that the entire team takes part in creating the cocktail menu, sometimes individually, sometimes in pairs.

The creative process lasts between four and six weeks. It always begins with the selection of a raw, seasonal ingredient chosen by each team member. Then, week after week, everyone presents the progress of their creation during our weekly meetings, creating space for feedback and discussion. This continues until, in the end, each cocktail becomes something unique and distinctive, reflecting both its creator and the values of The Cambridge Public House.

Here is a non-exhaustive list of recipes I’ve worked on over the past three years, following this approach:

1. Coastal Grooves ft. @olwen_grdx
Blood orange, tonka bean, Select Aperitivo, Planteray Cut & Dry, Takamaka Overproof

2. Halo Flip
Spinach, goat cream, Merlet EDV, sugar cane shochu, whole egg

3. Solitary Daze
Burnt kumquat, za’atar, Citadelle gin, Fair passion

4. Lightning Bolt
Grapes, sobacha, Merlet EDV, Cocchi Americano

5. Silver Springs
Celery, Calvados, port wine, rice distillate, smoked milk-wash

6. Luxury Motivation ft. @nikos_ofidis_
Bell peppers, nori seaweed, tequila, Empirical Ayuuk

7. Cosmic Romance
Parsley hypocras, pomegranate molasses, Monkey Shoulder blend

8. Sunshine Kiz ft. @niko_jito
Flat peach, eucalyptus, tequila, wasabi by @lucasjousss
