sharing my fav recipes and eats!!
POSTS STORIES REELS TAGGED
A little poem for my beloved banana bread🤩🤩

Your sweet smell seeps from the oven,
I wait for the timer to finish.
Your recipe so simple and fun,
It’s a shame when it’s all done.
You make everyone’s tummy smile,
And feel full and happy for a while.
Banana bread, my one true love,
You were sent from up above.

Now that you all know why I’m NOT a poet bahaha, I’m just going to say that this banana bread is FIREšŸ”„šŸ”„ it’s my mama’s recipe, and I stand by itā€¼ļøā€¼ļø I personally am not a believer in chocolate chip banana bread, but you can add them in there if you want (but be warned, I WILL judge you, just a little bit though). Anyways, I personally to like to eat my banana bread with almond butter, and this is, in fact, probably the only case where I prefer almond butter to peanut butter.

This loaf got me through week 7 of winter quarter, and let me just say, that is an ACCOMPLISHMENT!! School hits like a ton of bricks sometimes, but banana bread will always be there to pick you upšŸ¤—

And now that my tired brain has blabbed for entire too long, here’s the recipe!

2/3 cup sugar
1/2 cup shortening
2 eggs
1/3 cup buttermilk (can make by adding 1 tablespoon of vinegar to 1//3 cup milk and letting it sit for ~5 minutes)
1 cup mashed banana (~3 bananas)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Cream together the shortening and sugar. Add in the eggs one at a time, mixing between additions. Add in buttermilk and mashed banana, and mix thoroughly. Finally mix in the dry ingredients until fully combined.

Pour batter into greased loaf pan and bak at 350 for about 75 minutes or until the top is nicely browned and a toothpick comes out clean.

If you made it o the end of this, you are a WARRIOR, and I commend you🤌🤌 by @lucys.yums

brb I need to go make another stack of these pancakes that’s how good they were!!!

also this song is so appropriate for me rn since I fly to cali and start college in 3.5 WEEKS!! it’s crazy how quickly time flies by🄹🄹

oat pancakes with berry jam and yogurt:)
for the pancakes, mash 1 small banana and combine with 1/4 tsp baking soda, 1/2 tsp vanilla, 1 egg, and 1/2 cup oat flour (blended up oats). then cook it all in a pan like you would with regular pancakes!
for the berry jam, I just put ~1 cup frozen berries in a pan over medium heat and thawed them out and then added in 1ish tsp of chia seeds (totally not necessary, I just need to use mine up haha), 1ish tsp of honey, and a small squeeze of lemon juice. then let it cool off for a few minutes, and it’s ready:)
to assemble, I just did a pancake, a thin layer of yogurt, a scoop of the jam and then repeated that! I also added in pumpkin seeds and syrup on the very top:) by @lucys.yums

Camp eats!!

This is my third week at camp, so I’ve been a little mia, but let me tell you, I’ve had to get creative with food here haha. Camp food is camp food, and sometimes I’ve gotta make adjustments and random combinations. Sometimes they work out and other times they don’t, but here’s one that hit!!
Bread (ideally toasted but I was too lazy for that😭) with avocado (ideally ripe but that doesn’t ever happen at camp) and black beans topped with hot sauce. Like I said, random, but honestly so so good!!! by @lucys.yums

Pesto tomato & mozzarella grilled cheese

I have loved grilled cheese I can remember, and I’m not lying to you when I say this is the best one I’ve ever had! PLWASE GO MAKE IT RIGHT NOW!!

I made mine on seedy sourdough, you can use any bread you like. Then spread pesto on one side of each slice of bread, layer on fresh mozzarella and tomatoes, and close up the sandwich. Butter the outward facing side of each slice of bread and then cook in a on on medium heat until the bread is golden brown and the cheese is melts. by @lucys.yums

pov @daniel__hiller is coming after my brand

This was an egg, ham and cheese breakfast croissant. I can only assume it was delicious because Daniel wouldn’t share it, so ask him for confirmation. Also, the juice in the top right was orange mango juice and it was *chef’s kiss* by @lucys.yums

All I have to say for this is wow… it’s been a hot second since I last posted on here. This has been for a multitude of reasons, but I’ll try to briefly outline the main ones here. Number one, I’ve been super busy with balancing sports, school, music, and also having a social life (haha, can you imagine Lucy having one). And number two, the main factor, is that food has been a STRUGGLE for me. As some of you may already know, I’ve struggled with an eating disorder, and to be quite honest, this account didn’t do much to help, and if anything, only made me even more hyper focused on everything needing to be ā€œhealthy enough.ā€ Anyways, it got to be super exhausting and mentally draining to keep up with this, so I just took a break. After some time off, I’m at a much better place with food, not perfect by any means, and I still have a lot of hard days, but so so much better than I once was. My hope is that this account can now become a place where I share all of my recipes that make me happy. Some will be full of nutrients, and others, not, but they’re all part of a balanced life!

And now for the pictures, first is cranberry walnut bread, then @panerabread copycat green goddess salad that was 🤩, southwest style stuffed sweet potato, hummus because I’m high key obsessed, and then some pb&j baked oats, which to be honest, I haven’t made in like a year because they’re kinda a lot of work, and I just don’t have that much energy in the morning. by @lucys.yums

šŸ•øhappy halloweenšŸ•ø

This is probably the most adorable halloween food I’ve ever made (trust me, I’ve made a lotšŸ˜‚) and it also tasted fantastic! I just made a smoothie with frozen banana, blueberries, strawberries, yogurt, and almond milk. For the spider web part, I just put some yogurt into a plastic bag piped it in rings in the bowl. Then I used a toothpick from the center to the edges to complete the web. I topped mine with some strawberries and blackberries, but if you had some green fruit like grapes or kiwi, that would be super cute to go along with the halloween theme! by @lucys.yums

šŸ‚pumpkin oatmealšŸ‚

The weather is getting colder, and this oatmeal will warm you right up! I know it’s basic, but I’m all for the pumpkin flavored foods in the fall. I love them and they always make me feel happy! So hopefully I’ll be sharing a few more pumpkin recipes in the upcoming weeks!

I just cooked 1/3 cup oats with 2/3 cup water and added in some chia seeds (totally optional). Then I stirred in a chopped date for sweetness, but you could also do about 1 tablespoon of honey or maple syrup instead. I also stirred in 1 egg white (promise you can’t taste it) so that it would boost up the protein. I topped mine with some cashew butter, Greek yogurt, and pumpkin seeds! by @lucys.yums
