One hundred gram packets of shredded cabbage like this are readily available in every supermarket here in Japan.  it’s a convenience food but unlike highly processed convenience foods it’s pretty healthy. This particular brand washes their cabbage with carbonated water before packaging it without any additives. I always keep a few packets in the refrigerator for a quick snack. Last week, I discovered one that was about a week past its expiration date. I don’t pay very close attention to expiration dates, or best used by dates. I rely on the smell/taste test. When I took a bite, was surprised to find that lactic acid fermentation had begun. It was turning itself into sauerkraut. I ate the bag and didn’t seem to suffer any ill effects. That gave me an idea. Instead of buying a cabbage, then slicing it up, then pounding it. I’ll just buy packets of shredded cabbage and dump them into my fermentation jar and add the recommended amount of salt.  I understand that salt inhibits the growth of undesirable bacteria while allowing the lactobacillus bacteria to do its job.  Easy-peasy! by @lukecatwrangler

I had to check to make sure Bacha had not been bought by Nestlé. The brand was founded in Marrakesh in 1910, but it was failing. It was purchased by a French-Moroccan entrepreneur and a consortium of investors in Singapore.
