Mostly cooking vegetables and messing about with dough…
POSTS STORIES REELS TAGGED
A reminder to myself that soda bread is so perfect with soup, and that this one made with Spelt, Cheddar, Spring Onion and Chives will make the entire house smell fantastic while it bakes. by @lydia_downey

A moody looking but very comforting pot of beans, cooking slowly while the daylight fades and the rain absolutely pelts down outside. Tonight’s dinner is inspired by my need for carby comfort food after being outside most of today, so we’ll be having these homemade baked style cannellini beans with veggie sausages and cheesy chive mash. And obviously I’ve cooked loads because the leftovers will be for toast or baked spuds later in the week. by @lydia_downey

I made this the other day and couldn’t decide what it was. Not ratatouille but similar, and also with caponata vibes…I got several suggestions from clever friends commenting on my story post that it could be Ratanata which I love! So I’m having leftover Ratanata tonight with burrata 🤣. And if there’s anything left after that I might make it into a frittata…sorry I’ll stop now🤭(and sincere apologies to my Italian friends) by @lydia_downey

Monday lunch from weekend veg leftovers. A few cooked new potatoes, courgettes, red pepper, spinach, tomatoes, red onion, garlic and capers, sautéed in a pan with olive oil. The second pic shows some cute little Pullet eggs from @newmacdonaldsfarm cracked in amongst the veg and cooked with a lid on until set, then sprinkled with chilli flakes and parsley. by @lydia_downey

Courgette, spinach and ricotta tarts, made with homemade flaky pastry. Perfect to take on a picnic, on a gorgeous sunny Sunday in Ledbury, with two lovely friends who are both as obsessed with the tv series Succession as me! @sarah_hilary999 Imagine if that lady playing the piano there had played this instead! 🤣 taken in Eastnor Castle by @lydia_downey

Gosh it’s been a while since I posted here on the main grid! I’ve definitely been lacking inspiration and motivation in my home cooking lately so maybe that’s why? Anyway, I’m back home at last after a glorious 12 day dream trip away in the south of France and northern Spain. Lots of food inspiration there but not much of it that I could actually eat…
I’ve existed mainly on croissants (which some of you will know if you’ve seen my stories over the past couple of weeks!) bread, cheese and amazing tomatoes (swipe left to 4th pic to see one I bought in Bilbao). So to satisfy my bean craving (which is a thing btw) I’ve made a butter bean, courgette, tomato and feta salad (with red onion, capers, cornichons, toasted pine nuts, chives, mint and vinaigrette). Using lovely @boldbeanco butter beans because they are the best frankly. And also summer seems to have finally arrived here in the UK, so I ate my delicious salad in the garden and pretended I was still on holiday… taken in Bath, Somerset by @lydia_downey

Weekend sticky buns or Not Cross Buns, because it ain’t Easter yet and I can’t be bothered to faff around with a piping bag today! These have ground cardamom with the usual spices, lemon zest, Earl Grey soaked sultanas and are finished with a sticky marmalade glaze and pearl sugar. And they don’t need it but are SO good with salted butter! Very hard to stop at just one… by @lydia_downey

I only ever make congee for myself and only when there’s a tiny portion of rice leftover from the previous night’s dinner, which is usually just enough to produce a big bowl of soupy comfort. My way is completely inauthentic and not at all like the congee my mum grew up eating for breakfast. I add far too many things to add flavour and texture, and struggle to know when to stop with the toppings. Usually because I’m starving and greed takes over… But this was my solo lunch and so I made it exactly how I wanted with garlicky mushrooms, edamame, sweetcorn (both cooked in with the rice so hidden from view) chives, a bit of wild garlic, roasted cashews, crispy fried onion, a perfect @newmacdonaldsfarm egg, toasted sesame oil and crispy chilli oil. Absolutely delicious it was too. by @lydia_downey
