En haut de la route du Leutaz, à 1100 mètres, se trouve le Flocons de Sel.
C’est la maison d’Emmanuel Renaut. Le chef y cuisine ce que la Haute-Savoie lui donne, saison après saison.

Un restaurant trois étoiles au Michelin et une maison 5 étoiles Relais & Châteaux.

Ce mois d’août, j’ai eu l’honneur de prendre en images la brigade, le lieu et la cuisine.

Merci pour l’accueil, et hâte de revoir toute l’équipe.

40 ml Nikka From The Barrel
20 ml Umeshu
15 ml Fresh Lemon Juice
10 ml Honey Syrup
2 dashes Aromatic Bitters

Ketel one x Farmhouse

🍉 Watermelon vermouth
🍉 Watermelon brine
🍉 Watermelon pickles

Sometimes clouded by the media, other times by those around us.

Here, reason, like the heart, has a color.
Gray

▪️Watermelon vermouth
200 gr Don Julio Bianco
14 gr dry rose bud
2 gr jamaïcan pepper
3.5 gr gentian roots
Macerate 3h / mix every hours to stimulate extraction of essential oil

▪️400 gr watermelon green & red parts cryoconcentrate
5 gr fresh mint leaves
5 gr fresh sage leaves
2 gr citric acid
60 gr of sugar
macerate during 5 hours
freeze it 5 hours and filter onto a coffee filter

▪️300 gr Condrieu white wine
12 gr dry armoise
3 gr green cardamom
macerate 1 hours & mix it every 20 min to stimulate extraction of essential oil

▪️Watermelon brine & pickles
1000 gr water
30 gr fine non-iodized sea salt
5 gr rose bud
1 gr cardamome
1 gr jamaican pepper
