Kerala Mutton Curry
pressure cook mutton with garlic, ginger, turmeric and salt

-Sauté onion ginger garlic
Add ground spices- turmeric,coriander, red chilli , Kashmiri chilli, garam masala and salt to taste
-add curry leaves
-Add tomatoes
-add cooked meat
-cook for 45 min with lid on
-add crushed black pepper
Serve Hot

Pizza Sauce
-olive oil
-blended tomato
-Italian seasoning
-basil
-salt and sugar
Layer tortilla with sauce,cheese,toppings
Toppings I used - air fried - sausage, broccoli, jalapeño

Chana Masala
-oil
-onion
-ginger garlic paste
-masala -mdh chole masala+coriander powder+turmeric+red chilli-Kashmiri chili+garam masala
-tomato paste
-green chilies
-add cooked chickpeas
Cook in medium until desired thickness of the gravy
Serve with your favourite bread or rice

Kerala chicken Ghee Roast
DRY ROAST ALL SPICES AND THEN GRIND
-coriander
-cumin
-black pepper corns
-dry red chilies and Kashmiri chilies
For the gravy
-sauté onion in oil
-ginger garlic paste
-tomatoes
-add bone in chicken
-add salt as required
-water
Once chicken is cooked
-add the powdered masala/spice mix
-add ghee
Cook until gravy is thick
