Pear Zefir Marshmallow Recipe 🍐

Fluffy dessert making process 👇🏻
A little sweet comfort ✨

Save this recipe for later 🤍

Into the mixer bowl:
• 200 g pear purée
• 55 g sugar
• 40 g egg white

In a saucepan:
• 150 g water
• 180 g sugar
• 20 g invert syrup or glucose syrup
• 12 g agar-agar

Peel the pears, cut into pieces and steam until soft.
Let them cool and blend into a smooth purée.

Combine the pear purée, egg white and sugar in the mixer bowl and whip until thick and fluffy.

At the same time cook the syrup until it reaches a thin thread stage.

Pour the hot syrup in a thin stream into the whipping mixture, then beat for about 15 seconds so the mass doesn’t cool down.

Pipe the zefir swirls and let them set (mature) for 24 hours.

Share with a cozy friend 🤍

Store the zefir for up to 7 days in an airtight container at room temperature ❤️.
