๐Ÿ๐ŸŒถ๏ธ I'm all for keeping things spicy in October. And no, I don't just mean cinnamon.

This Gochujang Maple Roasted Squash has the fall sweetness covered, but the Gochujang gives it a savory little kick that takes it somewhere much more interesting.

Use butternut for softer, sweeter pieces or kabocha if you like your squash a little denser and nuttier.

INGREDIENTS
1 medium butternut or kabocha squash
2 tbsp Mama Kicks Gochujang Sauce
1ยฝ tbsp maple syrup
1 tbsp olive oil
1 tsp sesame oil
Salt and black pepper
Sesame seeds
Sliced scallions
Fresh cilantro

TO MAKE
Heat the oven to 425ยฐF. Cut the squash into wedges or chunks and toss with olive oil, salt and pepper. Roast for about 20 minutes. Mix the Gochujang Sauce, maple syrup and sesame oil, toss it through the partially roasted squash, then return everything to the oven for another 10โ€“15 minutes until tender with dark, caramelized edges. Finish with sesame seeds, scallions and cilantro.

Good alongside roast chicken or pork, over rice, or as the vegetable that mysteriously gets eaten before everything else.

The pumpkin carving table and the dinner table can share ingredients. That's efficiency. ๐ŸŽƒ

If you're heading to the pumpkin patch with the kids this October, grab the carving pumpkins... and then pick up a couple meant for cooking.

Pie and sugar pumpkins have denser, sweeter flesh than the big carving varieties and can become pumpkin soup, curry, muffins, pancakes, pasta sauce or a tray of roasted pumpkin for dinner.

Then save the seeds from the carving operation too. Clean them up, roast them until crisp and season them with whatever everyone will actually eat.

You still have to clean pumpkin guts off the floor, obviously. We can't solve everything.

Bring on the Halloween cooking with Mama Kicks! ๐Ÿ‘ป๐ŸŽƒ

๐Ÿฉธ Well, it is spooky season... so let's make some bloody noodles.
No actual blood required. Obviously.

These glossy Gochujang Udon Noodles are red enough for Halloween, but we're keeping the recipe firmly on the delicious side of creepy.

INGREDIENTS
2 portions fresh or frozen udon noodles
1 tbsp neutral oil
6 oz mushrooms, sliced
2 tbsp Mama Kicks Gochujang Sauce
1 tbsp soy sauce
1 tsp sesame oil
2 tbsp water
2 scallions, sliced
Sesame seeds
2 fried eggs, optional

TO MAKE
Cook the udon according to the package directions, keeping them pleasantly chewy rather than soft. Brown the mushrooms in a hot skillet with the oil, then add the cooked noodles. Stir together the Gochujang Sauce, soy sauce, sesame oil and water and pour it into the pan. Toss over medium-high heat for 1โ€“2 minutes until the noodles are hot and glossy. Finish with scallions, sesame seeds and a fried egg if you like.

A noodle note: Look for the thick, plump udon sold fresh or frozen at Asian grocery stores and in the refrigerated or freezer section of many larger supermarkets. They hold onto sauce beautifully and give you that satisfying chew. Don't boil them into submission. Nobody asked for noodle porridge.

๐ŸŒฟ A little Chimichurri 101.

Chimichurri comes from Argentina and Uruguay, where it's famously served alongside grilled meats. But its appeal is really in the contrast: rich, smoky food meets something fresh, acidic and herb-heavy.

Mama Kicks makes ours with parsley, cilantro, garlic, olive oil and red wine vinegar, giving it that unmistakable green, garlicky tang.

And steak is only the beginning.

Spoon it over roast potatoes. Finish grilled chicken or fish with it. Toss it through warm beans. Add it to sandwiches. Drizzle it onto eggs. Or give roasted vegetables a generous spoonful just before serving.

This is very much a put-it-on-after-cooking sort of sauce. Let those fresh, sharp flavors do their thing. Find our Chimichurri on Mamakicks.com!

Fries have found a new friend. ๐ŸŸ

For a very quick Chimichurri Fry Sauce, mix:

๐Ÿซ™ ยฝ cup mayonnaise
๐ŸŒฟ 2โ€“3 tbsp Mama Kicks Chimichurri Sauce
๐Ÿ‹ 1 tsp fresh lemon juice
๐Ÿง‚ Pinch of salt

Stir it together, taste, then add another spoonful of Chimichurri if you want it punchier.
The mayo makes it creamy, while the parsley, cilantro, garlic and vinegar in the Chimichurri give it enough zip to cut through a pile of hot, salty fries.

Also good with sweet potato fries, roasted potatoes, burgers and sandwiches. Possibly dangerously good with onion rings.

Find the Chimichurri on our site!

Have I mentioned how much I love squash? ๐Ÿ‚

It's possibly the hardest-working vegetable in the fall kitchen. Butternut gets silky enough for soup. Delicata can be roasted with the skin on. Acorn squash practically comes with its own serving bowl. Kabocha is dense, sweet and brilliant when you want those properly caramelized edges.

And roasting is only the beginning. Mash it, puree it, stuff it, add it to curries, fold it through pasta or simmer it into a stew.

For the roasting route, try cubes or wedges with Mama Kicks Berbere Sauce. The warm spices and tomato base work particularly well against the natural sweetness of winter squash. Add the sauce toward the latter part of roasting so you get caramelization without burning it.

One vegetable. An unreasonable number of dinner options.

๐ŸŽƒ Pumpkin patch rule: pick the weird ones.

Orange, white, green, striped, flattened, miniature, smooth, warty... pumpkins come in a lot more varieties than the standard jack-o'-lantern.

And those wonderfully bumpy ones? In many ornamental varieties, that knobbly skin is simply a trait they've been bred for. Pumpkin cultivars naturally come in an enormous range of shapes, colors and textures, including varieties specifically known for warts and unusual skin.

Just remember that decorative and delicious aren't always the same thing. If you're planning to cook yours, look for a variety sold for eating, such as Sugar/Pie, Kabocha or Cinderella-type squash. Then roast it, puree it into soup, bake with it, or save those seeds for later.

So yes, bring home the ugly one. It deserves a spot on the porch too. ๐ŸŽƒ

Shepherdโ€™s pie, but make it absolutely unforgettable. ๐Ÿ ๐Ÿ”ฅ๐Ÿฅง

We are taking this cozy fall classic and giving it a massive kick.
Swap the boring mashed potatoes for creamy mashed sweet potatoes. Then, spike your ground turkey or chicken filling with a heavy spoonful of Mama Kicks Jerk Marinade.

The sweet potato perfectly balances the Scotch bonnet heat, while the Caribbean herbs, citrus, and warm spices give this comfort food an entirely new personality.

Cozy? Yes. Predictable? Never again. ๐Ÿ‚

How much Gochujang is too much Gochujang? ๐ŸŒถ๏ธ๐Ÿค”

Well, that depends entirely on who is holding the spoon.
Unlike hot sauces that just burn your mouth, Mama Kicks Gochujang is packed with savory depth, tang, and sweetness behind the heat. You can actually taste your dinner.

The Gochujang Rule of Thumb:
๐ŸŒถ๏ธ Curious? Start with one spoonful.
๐ŸŒถ๏ธ๐ŸŒถ๏ธ Like some heat? Double it.
๐ŸŒถ๏ธ๐ŸŒถ๏ธ๐ŸŒถ๏ธ Already reaching for the jar again? We aren't here to stop you.

The correct amount is whatever makes you go back for a second bite. ๐Ÿ˜‰

Consider this your official cue to go camping. ๐Ÿ•๏ธ๐Ÿ”ฅ๐Ÿฅฉ

We only have a few good weeks left before Minnesota permanently commits to fall weather. Pack the tent and put dinner directly over the fire.

Steak and Mama Kicks Chimichurri were literally made for this. Originating in Argentina, Chimichurri is intrinsically tied to asadoโ€”the tradition of cooking meat slowly over wood fires. The bright vinegar, garlic, and fresh herbs are the ultimate contrast to rich, smoky, campfire-charred beef.

No kitchen required. Just don't forget the tongs.

Want restaurant-quality flavor? Give your spices a minute to wake up. ๐Ÿ”ฅโฑ๏ธ

Itโ€™s called "Blooming".
When you briefly warm aromatic spices in oil or a hot pan, it releases their fragrant oils and drastically deepens their flavor.

Next time you cook, try adding a spoonful of Mama Kicks Berbere to a warm, oiled pan for just 60 seconds before you add your veggies, beans, or broth. That quick burst of heat intensifies the Ethiopian spices and builds an incredibly rich base for your whole dish.

Just keep the heat moderate. We are blooming the flavor, not cremating it! ๐Ÿ˜‰

Are you currently suffering from Zucchini Overload? ๐Ÿฅ’๐Ÿ†˜

September is the month where innocent garden plants suddenly produce more "zooks" than any family can physically eat. Don't panic.

How to defeat the Zucchini mountain:
๐Ÿ”ฅ Grill thick planks and drench in Mama Kicks Chimichurri.
๐ŸŒถ๏ธ Roast slices tossed in our smoky Berbere Sauce.
๐Ÿฅ’ Hollow them out for stuffed zucchini boats.
โ„๏ธ FREEZE THEM! Grate them, squeeze out the water, and freeze for winter baking and soups.

Your garden may be out of control, but dinner doesn't have to be. ๐Ÿ˜‰
