I spotted a few overripe bananas in my kitchen, but I didn’t have enough butter.

So, I decided to use whatever ingredients I had at home, and the result was this beautifully moist banana bread.

Here’s the recipe:

Ingredients:

* 240 g all-purpose flour
* 1½ teaspoons baking soda
* A pinch of salt
* 100 g granulated sugar
* 90 g brown sugar
* 99 g vegetable oil
* 2 eggs
* 1 teaspoon vanilla extract
* 4 medium ripe bananas, mashed (about 300 g)
* 113 g coarsely chopped walnuts (or any nuts you have at home)

Instructions:

1. Preheat the oven to 160°C.
2. Grease an 8 × 4-inch loaf pan and set aside.
3. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
4. In a large bowl, whisk together the granulated sugar, brown sugar, oil, eggs, and vanilla extract. Add the mashed bananas and stir until combined. Add the dry ingredients and mix just until incorporated. Using a rubber spatula, gently fold in the walnuts.
5. Pour the batter into the prepared loaf pan.
6. Bake for 45–55 minutes, or until a thin knife or skewer inserted into the center comes out clean. If the top begins to brown too quickly before the center is fully baked, loosely cover it with aluminum foil.
7. Let the banana bread cool in the pan for at least 10 minutes before transferring it to a wire rack to cool completely.

My mum was in Bali few weeks ago. This is her second time coming to our house in Bali since we moved here 10 months ago.
One of many of her cooking and baking that we missed so much is her homemade potato doughnuts.
It’s so soft and fluffy.
She used mashed potatoes to adds moisture to the dough, which contributes soft, light and fluffy texture.

I checked with her whether i can share her recipe in my Instagram, and she said yes!!

So here is the recipe ❤️

Dry ingredients:
7g instant dry yeast
100gsugar
360g all purpose flour
¾ teaspoon sea salt

Wet Ingredients:
125ml warm water
75g melted butter
165g hot mashed potatoes
125ml warm milk
1 egg or 1/4cup buttermilk

Instructions:
1. In a large bowl, mix together the Yeast, sugar, flour, and salt.
2. In a separate bowl mix together the warm water, melted butter hot mashed potatoes, warm milk, and egg (or buttermilk)

COMBINE THE WET AND DRY INGREDIENTS:
1. Combine the wet and dry ingredients and mix until you have a soft dough.
2. Cover the dough and leave to rise in a warm place for 40 minutes.
3. Punch down the dough and turn it out onto a well floured surface.
4. Press or roll out to ½ inch ( 1 ½ cm ) thick. Cut out using a doughnut or cookie cutter (or you can just shape it manually).
5. Place the cut out doughnuts onto a tray and leave to rise again for about 15 to 20 minutes.
6. Using a deep pan, add sufficient oil to deep fry the doughnuts.
7. Allow the oil to heat up to between 176°C - 185°C before frying the doughnuts.
8. Deep fry the doughnuts for about 1 minute on each side, or until cooked and golden brown.
9. Drain the doughnuts on paper towel and top as preferred.

Enjoy!! ❤️

It’s kind of our tradition every December to bake and decorate Gingerbread Cookies at home as a family.
Apparently, it’s our first Christmas in Bali, and hopefully there will be more and more baking at home in 2023 🤗.

Merry Christmas and Happy Holidays, everyone!♥️♥️🎄🎄💐🥰🥰

I finally made these yummy 𝓙𝓪𝓶 𝓼𝓪𝓷𝓭𝔀𝓲𝓬𝓱 𝓫𝓲𝓼𝓬𝓾𝓲𝓽𝓼 few months ago (and i forgot to share it here, as My family and I were in the middle of house moving etc).

So I’ve used :
125g butter, softened
110gr caster sugar
1 Free Range Egg
225gr all purpose flour
1 tsp pure vanilla extract
1 tsp finely grated orange rind
1 tsp almond extract
320gr raspberry jam
Icing sugar, to dust (Optional)

Method:
1. Use an electric mixer to beat the butter, sugar and egg in a large bowl until just combined. Add flour, vanilla, orange rind, almond extract. Beat until the mixture just comes together.
2. Turn dough onto a lightly floured surface. Gently knead until smooth. Divide into 2 portions and shape into discs. Cover with plastic wrap and place in the fridge for 30 mins to chill.
3. Preheat oven to 160’C. Roll out the dough on a lightly floured surface until 3mm thick. Use an 8cm round cutter to cut discs from dough, rerolling excess. Use 2cm star, heart and whatever cute cutters you have at home to cut shapes from centres of half the discs. Place discs and shapes on lined baking trays. Bake for 10-12 mins or until light golden. Cool on the trays.
4. Spread a little jam over 1 full disc. Top with 1 cut disc. Repeat in batches with remaining discs. Spoon a little extra warm jam into the centres of the cut discs to fill. Cool. Dust with icing sugar if you like ♥️.

Enjoy!

Thank you once again to everyone that participated in Christmas collaboration #joyfulchristmascollab2021 that hosted by me and @s.a.r.a.h.bakes.

Here is the reel and recipe of the homemade Christmas pavlova wreath that i made on December 24th.

Ingredients:
6 free-range egg whites
300gr caster sugar
1 tsp white wine vinegar
1 tsp cornflour

For the filling:
600ml double cream
1 tsp pure vanilla extract
50gr icing sugar, sifted
Mixed fresh berries
a few mint leaves, to decorate (optional)
icing sugar, for dusting

Instructions:
1. Preheat the oven to 140C. Line a large baking tray with baking parchment and draw a 30cm/12in circle in the middle of the paper. Draw a 15cm/6in circle in the centre of the larger circle to make a ring.
2. Put the egg whites in a mixing bowl, whisk with an electric whisk until soft peaks form. Gradually add the sugar a little at a time, whisking on maximum speed until they are stiff and glossy. Mix the vinegar and cornflour in a cup until smooth, then stir into the egg whites.
3. Spoon the meringue onto the ring drawn on the baking parchment. Using a large spoon make a shallow trench in the meringue for the cream and fruit to sit in.
4. Transfer to the oven and immediately reduce the temperature to 120C. Bake for 1 hour–1 hour 15 minutes, until the outside is hard but still white.
5. Turn the oven off and leave the pavlova inside for an hour or overnight to cool and dry.
6. Before you serve, whip the cream, vanilla and icing sugar until stiff peaks form.
7. Spoon the cream into the trench in the meringue. Arrange the berries on top and decorate with a few mint leaves, if using. To serve, dust with icing sugar.

Enjoy!

A mince pie (also mincemeat pie in New England, and fruit mince pie in Australia and New Zealand) is a sweet pie of English origin, filled with a mixture of dried fruits and spices called "mincemeat", that is traditionally served during the Christmas season in much of the English-speaking world - wikipedia.
