Walleye tacos with a view! And I caught the fish myself. That’s a well earned meal. 😊

I still use the keto wraps from Costco. They’re my absolute favourite. I make a homemade bruschetta and a homemade red cabbage coleslaw. I fry the fish in olive oil and butter, and some franks hot sauce, and a few random spices. Add some avocado and shredded cheese. So delicious! 💚

Now this is what I call an appetizer. 🍅🌱
So simple yet so flavorful. There’s nothing better than garden tomatoes. Throw in some fresh bocconcini cheese, chopped basil, olive oil, and some S & P.

I have a race tomorrow so today I’ll be eating some extra carbs. This bowl has around 100g or carbs, 28g of protein, and 9g of fat. ❤️ Ingredients below. 👇

•1/2 cup uncooked oats
•3/4 cup of Greek yogurt
•chopped apple (which I through into the oatmeal as it was cooking to soften the apple)

A salad should never be boring…

I used spinach, tomatoes, peppers, red onions, black beans, avocado, and some fresh herbs. My salad dressing is always the same… Olive oil and some kind of vinegar, green goddess seasoning, and S & P. And then added on some fried halloumi. Seriously halloumi is so so SO delicious!! 🤤

I have been loving oatmeal these days, especially after a long run .

This is cooked oats with chopped apples and cinnamon. I chop the apples and throw them in with the oatmeal when the oatmeal is about halfway cooked. This gets the apples, nice and soft but not too soft. 🤓And then I add in some Greek yogurt, chopped pecans and a little honey. Delicious! 💛❤️🤍

Bruschetta with a view! 😍

Now that I’ve been dabbling in healthier carbs, I’ve been able to try lots of different recipes. This is just toasted sourdough bread with fried halloumi (seriously the best thing ever) and I topped it with my homemade bruschetta.

All I do for my bruschetta is chop some tomatoes, add in some mixed garlic, chopped basic, olive oil, and a little salt and pepper. Simple and delicious. 💚🤍❤️

🍎 Low-Carb Apple Crisp — Makes TWO 8 × 11 dishes

Apple filling:

* 10–12 medium apples, peeled and thinly sliced
* ⅓–½ cup monk fruit sweetener, depending on how sweet the apples are
* 2 tsp cinnamon
* ½ tsp nutmeg
* 2 tbsp lemon juice
* 2 tsp vanilla
* 2 tbsp almond flour
* Pinch of salt

Crisp topping:

* 1½ cups almond flour
* 1 cup old-fashioned rolled oats
* 1½ cups chopped pecans or walnuts
* ½ cup monk fruit brown-sugar-style sweetener (regular monk fruit is fine too)
* 2 tsp cinnamon
* ½ tsp salt
* ½ cup butter, melted
* 1 tsp vanilla

Instructions:

1. Heat oven to 350°F (175°C). Lightly butter or spray both glass dishes.

2. Toss the sliced apples with monk fruit, cinnamon, nutmeg, lemon juice, vanilla, almond flour and salt.

3. Divide the apples evenly between the two dishes. They’ll cook down quite a bit, so it’s okay if they’re piled fairly high.

4. Mix almond flour, oats, nuts, monk fruit, cinnamon and salt. Add the melted butter and vanilla and stir until you get moist, crumbly clusters.

5. Divide the topping over both dishes. Don’t pack it down—you want those crispy little bits!

6. Bake 40–50 minutes, until the apples are bubbling and tender and the top is golden. If the topping gets too brown, loosely cover with foil for the last 10–15 minutes.

7. Let it sit 15–20 minutes before serving so the filling thickens.

Vegan and delicious 🙂

The biggest game changer for me when making salads is adding fresh herbs. It makes a world of difference. I always add fresh dill, Italian parsley, or basil. It adds so much flavour. I always use extra-virgin olive oil and different types of vinegar for my dressings. Super simple and healthy.

Enjoy! 💚
