At 11.30pm last night, the rain came to give us some relief from the haze and heat.
I went to sleep with the hope that when morning comes, the mountains could be seen again.
Another day perhaps.
I can only imagine what the population, both human and animals are going through there 😮‍💨 taken in Kuala Lumpur, Malaysia by @marissa1505

3 different timestamps across 1.5 hours on a Sunday evening, 5pm-6.30pm, bright but cloudy, to rain, then heavier rain... it's good to see the mountains again and get much needed relief from the heat and haze ❤️ taken in Kuala Lumpur, Malaysia by @marissa1505

This is a recipe taught by my aunt MANY years ago, and was probably passed on to her by my grandma.. having said that, this is a very forgiving dish to make because the measurements really don't matter - you season with your ancestors blessings and judge with your own tongue. Today, I just made do with what was available in the kitchen with a little less curry powder than I'd normally use because I ran out of it 😄✌️
Anyway, here's what I used and how it went!
Note: Almost every family in Malaysia, if not all, will have a variation of this, and it's all good! Share yours and let's learn from each other!

Ingredients:
1 x 425g of canned mackerel tomato sauce.
2 x regular sized onions, I used white onions, you can used whatever you have or don't add them if you don't like it.
4-5 cloves of garlic, roughly chopped.
6 small potatoes, cubed.
1 tbsp of tamarind paste, mixe with water, add more to reduce the fishy smell. Use lemon juice or white vinegar as replacement.
2 tbsp curry powder and 1 rbsp chilli powder, mixed into a paste.
Oil - any oil you cook with, enough plus a little extra to cover the based of the pot you're using.
Salt, if needed. I, however, did not use it.

How:
1. Add oil to pot, once heated up, sauté the onions, then garlic until fragrant.
2. Add the curry/chilli powder paste and stir until the oil breaks
3. Add the canned mackerel and add water to the can, full, and add to pot.
4. Mash the mackerel into chunks, as big or small chunks as preferred.
5. Add the potatoes, stir and scrap the bottom of pot to loosen anything stuck.
6. Simmer on low for about 10-15 mins or until potatoes are tender.
7. Then enjoy with rice, bread, or pasta!
