FINALLY made it here with Mely & Elie. These bfast sandos were FANTASTIC, especially in the carbon-copy land of Chilaquiles & Molletes. I read about this spot 5-6 months ago… and maybe even a year ago, when I was researching cities. (I look at the menus of 30-50 restaurants in every city I consider visiting 🤣🤷🏻‍♂️)

I LOVE good chilaquiles, but when 80% of cafes have 80% the SAME menu, something different like this really stands out.

This is Tikuun Comedor, in Guadalajara. A beautiful example of local cuisine… elevated and unique. From thoughtful flavors & textures, to a very kind & professional server, this was a fun experience and I will return to try the short ribs & duck 🦆. taken in Tikuun. Comedor local by @marksusan

Back to 1287 Parrilla Alternativa for some cross-cut beef ribs. These are grilled Argentinian style & also the cut we (Koreans) use for “kalbi.” Also a pork “chicharrón” taco and some maple-glazed grilled pork belly. Deeeeeelicious! taken in 1287 parrilla alternativa by @marksusan

I cooked these 2 prototypes tonight before they get added the official dinner menu of @desayunadorpajarito. Item #1 is Korean-style pork “Bulgogi Nachos” and Item #2 is similar, but as a quesadilla. (the quesadilla needs some refinement and LESS wet cilantro) but overall, it’s gonna be fun to see 2 items I “designed” get printed on the new menu. Simple food and not SUPER “authentic,” but totally executable, with realistic food-cost and the ability to make quickly. Pragmatic meets Flavor… I HOPE 😬🤔🤷🏻‍♂️🤣🤞

🔥🥟 THESE crispy fried pork dumplings: where big meets delicious. LOVE these giant gyoza! And then 2 other faves of mine—salt & pepper pork & cumin lamb noodz. The pork takes some work… lotta bones, but it’s worth it for me… utterly satisfying. And the cumin lamb noodles… with “shaved” style noodz. So, so comforting… what a beautiful texture & mouth feel 🥰
