Today is a good day to make a peach galette.

If homemade pastry terrifies you, consider this your sign to try a galette. No crimping, no perfection, 10/10 taste. It’s crisp on the outside, light and buttery on the inside, and full of sweet, juicy summer peaches.

We’re normalizing baking on a random weeknight because peak stone fruit season waits for no one (though saving it for the weekend works too—you do you!). Topped with sweet apricot glaze, creamy whipped mascarpone, and a touch of fresh tarragon to make it extra special.
