Let me introduce myself!

There are a lot of new folks around here, so I thought I’d simply say “Howdy!”

My name is Martin, and I’m a self-taught home baker, cook, writer, recipe developer, and person who thinks about food all the time. I appeared on the Great American Baking Show in 2023, and [SPOILER ALERT] Paul Hollywood and Prue Leith named me the winner! (You can watch it for free on @therokuchannel.)

I’m a Hoosier who now calls Chicago home (#midwest) I write a weekly-ish newsletter called Great Bakes (link in bio), which is full of recipes and ramblings. My baking has appeared in the pages (and on the airwaves) of @foodandwine @chicagotribune @bakemagazine @chicagomag @southernlivingmag @WBEZchicago @wgnnews and more.

I love playing board games, traveling, live music, swimming, ceramics, and the colors purple and teal. I tend to buy large amounts of seasonal fruit. I also love connecting with folks who follow me and enjoy chatting about baking and food.

I’m a Certified Bread Sommelier!

This journey began with a course in German bread baking at @backakademie in 2024, and meeting @michaelkress_brotsommelier. 

Last fall, I returned to Weinheim for an intensive, year-long course on all things bread. Not just baking but history, culture, science, marketing, and bread pairing. Most importantly, communicating about bread: describing it like someone would describe a fine wine and sharing stories about this ancient food.

After a week of exams and a research project, I graduated this week! 

The best of all is that I made a dozen new friends, each from different countries and on six continents. I will always treasure these folks and the conversations we had. taken in Akademie Deutsches Bäckerhandwerk Weinheim by @martinsorge

GREAT BAKES ON THE ÖLBERG ⛰️

Serves: two hikers, one dog

INGREDIENTS:

- 1 German forest
- 1 Rhineland mountain (460 masl, so ok just an ambitious hill)
- 1 @thegreatamericanbakingshow winner (also @trink_magazine author)
- 1 spectacular, undeserved sunny Sunday
- 2 water bottles 
- 1 lab-mix puppy (refused to be photographed)
- 1 signed copy of Great Bakes 

METHOD: Climb. Talk bread, including proper cutting and tasting technique (and $60.00 Austrian rye in NYC), because that is what happens when a wine writer and a baker share a trail. Reach the top, be gobsmacked at the view. Eat, drink, walk down, get lost, retrace steps and eventually reach the bottom for the real reward: 

a signed copy of @martinsorge newest cookbook sensation. 

GREAT BAKES is a love letter to the Midwest, Michigan cherries, sweet corn, and German bread (a whole chapter of it!) with lessons that he clearly earned the hard way yet wrote with just enough confidence to make you believe your kitchen can handle it too.

Realize this is why you do what you do, for those moments when the wine world and the food world, frankly just the people world, turn up because they recognize a good path when they see it, and choose to walk the same way even if only for a few glorious moments.

In May 2024 while deep in the process of writing, organizing & obsessing over all the details of publishing Bitter & Sweet, I found myself thinking about the beginning of the book. I wanted a strong foreword, something that would welcome readers in and offer a glimpse of what was to come.

I wanted it written by someone who understood the complexity of a hyphenated identity and the experience of being a person of color. Someone who could relate to the stories I was sharing, whose own work reflected integrity & creativity, and whose endorsement would bring another layer of meaning to my first book.

Through a friend's recommendation and mutual introduction, I was connected with Lauren Ko, the creative mastermind behind Pieometry & @lokokitchen.

To my delight, Lauren agreed to meet with me and hear the story behind Bitter & Sweet. What I could never have imagined was just how deeply she would understand it.

She not only agreed to write the foreword, but wrote something that, even after reading it countless times, still brings tears to my eyes. Because she got me. She got the book.

And through Lauren, I found something unexpected: a community of food & cookbook authors who continue to celebrate & support one another through her intimate Cookbook Book Clubs.

Last night's gathering, featuring dishes from Bitter & Sweet, felt like the most delicious kind of full circle.

There is something incredibly moving about watching people gather around a table, cook your recipes & share the food with such joy. Recipes that once existed as ideas, scribbles, and endless rounds of testing suddenly become food shared among people.

I got to see old friends, make new ones, and meet Martin Sorge, who is in Seattle promoting his gorgeous new cookbook, Great Bakes. Martin recently held an event with the brilliant Carlos Leon, the mastermind behind Seattle's Baking Club.

One cold-call email, one introduction, one book, and somehow a whole community grew from it. That may be one of the greatest gifts this cookbook has given me.

Food creates connection. Books create community. And sometimes, the most beautiful part of writing a book is discovering the people you meet along the way ❤ taken in Seattle, Washington by @martinsorge
