🌸💚 **ICED MATCHA PINK PITAYA** 💚🌸

A latte that looks as gorgeous as it tastes? 😍 Here's how to make this three-colour beauty 👇

🛒 **You'll need:**
🍵 1 tsp Japanese Premium Matcha from @matchacolors
🐉 1 tsp Pink Pitaya from @matchacolors
🥛 200 ml of your favourite milk or plant-based drink
🍯 Sweetener to taste (optional)
🧊 Loads of ice

✨ **Step by step:**
1️⃣ In the bottom of your glass, mix the pitaya with a splash of milk and your sweetener until it's a lovely vibrant pink 💖
2️⃣ Fill the glass with ice 🧊 and gently pour in the rest of the milk
3️⃣ Whisk the matcha with 60 ml of hot water (never boiling! 🔥🚫) until it's nice and frothy 🌿
4️⃣ Pour it slowly over the top to create the green layer and... ta-da! 🪄

🌈💙💗 Colourful lemonade with natural jellies 💗💙🌈

Refreshing, vegan and a little bit magic: watch the butterfly pea turn from blue to purple as it meets the lemon 🍋✨

📝 RECIPE (serves 4)

🔵 Butterfly pea jelly
250 ml water · 2 tbsp dried butterfly pea flowers · 1.5 g agar-agar · 20 ml agave

💙 Blue spirulina jelly
250 ml water · 1 tsp blue spirulina · 1.5 g agar-agar · 20 ml agave

💗 Pink pitaya jelly
250 ml water · 2 tsp pink pitaya · 1.5 g agar-agar · 20 ml agave

🍋 Lemonade
120 ml lemon juice · 60 ml agave · 600 ml cold water · ice

👩‍🍳 METHOD
1️⃣ Steep the butterfly pea in hot water for 5 mins, then strain.
2️⃣ Boil each base with the agar and agave for 2 mins.
3️⃣ Off the heat, stir in the spirulina and pitaya (so they keep their colour).
4️⃣ Leave to set in the fridge for 1 hour, then cut into cubes.
5️⃣ Mix the lemon juice, agave and water.
6️⃣ Jellies in the glass + ice + lemonade... and enjoy the show! 🎨

The finishing touch
☕ Kape: a double espresso with 20 g melted white chocolate
🍵 Matcha: 1 tsp Matcha Colors Japanese Matcha + 50 ml water at 75–80 °C with 20g of melted white chocolate

Method
1️⃣ Whisk the ube with the water until smooth.
2️⃣ Fill your glass with ice and pour in the ube.
3️⃣ Add the cold milk.
4️⃣ Pour the white chocolate espresso or whisked matcha over the top.
5️⃣ Finish with cold foam and a dusting of ube.
