It’s National Taco Day 🌮 and these Crispy Chicken Tacos with Mateo’s are the perfect way to celebrate!

Made with @mateos_salsa for That Farmers Market Fresh Taste™ - crispy, cheesy, and such an easy family dinner.

CRISPY CHICKEN TACOS

For the chicken:
2 lbs boneless, skinless chicken breasts
1 jar Mateo’s Salsa
1 packet taco seasoning

For the tacos:
8–10 flour tortillas
2 cups shredded Mexican-blend or Monterey Jack cheese
2–3 tbsp butter, divided
Shredded chicken

To serve:
Mateo’s Salsa
Guacamole
Sour cream
Your favorite taco toppings

Add the chicken to the slow cooker and sprinkle with taco seasoning. Pour Mateo’s Salsa over the top. Cover and cook on LOW for about 5 hours, or until the chicken reaches 165°F and shreds easily with two forks. Shred the chicken directly in the slow cooker and toss it with the salsa and juices.

Preheat a griddle to 350°F. Melt a little butter over the surface and add the tortillas.

Sprinkle about ¼ cup cheese over one half of each tortilla, then add about ¼ cup shredded chicken. Don’t overfill them! Fold the tortillas in half and gently press with a spatula.

Cook for about 2–3 minutes per side, flipping as needed, until the tortillas are golden and crispy and the cheese is completely melted. Add a little more butter to the griddle between batches as needed.

Serve hot with Mateo’s Salsa for dipping, plus guacamole, sour cream, or your favorite toppings.

College football is BACK 🏈 and I’m always looking for an easy game day appetizer everyone will actually want to eat.

SAVE this baked sausage salsa dip for game day this weekend!

Creamy, cheesy, so easy to throw together, and @mateos_salsa gives it that FARMERS MARKET FRESH TASTE™ that makes this one so good.

Baked Sausage & Mateo’s Salsa Dip

Ingredients:
1 lb breakfast sausage
8 oz cream cheese, softened
1 cup Mateo’s Salsa
1 cup shredded pepper jack cheese
1/2 cup shredded cheddar cheese
2 green onions, sliced
Tortilla chips, for serving

Directions:

-Preheat oven to 375°F.
-Brown the sausage in a skillet until fully cooked. Drain any excess grease.
-Add the cream cheese, Mateo’s Salsa, and pepper jack cheese to sausage and cook until melted and combined.
-Spread the mixture evenly into a small baking dish.
-Sprinkle the cheddar cheese over the top. I add a little pepper jack cheese too.
-Bake for 18-22 minutes, or until the dip is hot and bubbly and the cheese is melted. Broil on high for 2-3 min untils golden. Keep an eye on it!!
-Top with sliced green onions and serve warm with tortilla chips.

The salsa is so yummy. My mouth waters as soon as I open the jar and its aroma hits my nose. The flavor is really fresh with a vibrant kick. I love that it has texture, too. I usually find myself using the salsa atop eggs, adding to my salads, or, of course, straight from the jar with some good ol’ tortilla chips. Sometimes I’ll even doctor up the salsa, adding some hot sauce to turn up the heat.

I just need Costco to start carrying more of Mateo’s line up next!
