I’ve been terrible about using Instagram (I hit my 40th country and didn’t even post about it!) but I want to tell you that the Plant-based Sports Nutrition book I worked on is now available! We jammed so much info in here: it seriously has everything you need to know to fuel on plants. Over 600 citations! It’s an update to the 2006 Vegetarian Sports Nutrition book also by Enette Larson Meyer, PhD, RD, and it was an honor to work with her and @humankinetics. Available where books are sold! Thank you everyone who has been supportive of my work. Really means a lot to me. Thank you. taken in Los Angeles, California by @mattruscigno

Wondering how to tackle the Lehigh Valley Vegan Chef Challenge this September?

It’s as easy as 1, 2, 3:

2️⃣ Local Diners Feast: Visit the participating spots anytime from Sept 1–30 and order the VCC specials.

3️⃣ The Local Community is the Judge: Diners head to our website to rate/review their meals and help decide who takes home the ultimate vegan bragging rights! 🏆

❤️Are you a local business? Sign up at veganchefchallenge.org/lehigh

Cafes, bakeries, ice cream shops, restaurants, cottage kitchens, delivery-only, etc.: all types of businesses are welcome!

Thank you to @animaldefendersglv for partnering with us to bring this event to life ✨

Happy anniversary to the loml @mattruscigno 🥹
I’d marry you 100 times over, in every lifetime.

Copy of my vows (for us and also for everyone who didn’t really hear them cuz they accidentally got too sloshed before the ceremony on the strongest margaritas to ever be served at a wedding- sorrry):

It’s easy today to make lofty promises. We’re at our wedding (can you believe it?), happy and surrounded by the people we love, but it’s a whole lot harder to keep promises of patience and understanding when we’re tired, alone, and not seeing eye to eye, so my vows today are for those two people. They’re for the days when my irritability bubbles like magma, they’re for the days when we both swear the other person said something else. I make these vows for when we’re traveling and can’t find the right platform in the rain on a tight schedule, when we’re hungry but neither will yield “what do you want to eat??”. I make these promises for you and myself when we make mistakes. When we stumble with our words and our actions. I make these promises for those two people.

When we want different things, I promise to see you as an individual who deserves respect, patience, and understanding.

When I am angry, I promise not to raise my voice. I promise not to name call. I promise to do my best to stay in the present and not dig into sore spots from the past.

When you are sick….well, we’ve already done a pretty big trial run on that one! but I promise to show the same ferocious love and commitment when the physicality of life gets rough.

When you’re down, I promise to try my best to balance giving you space and comfort.

I vow to put the work in, for myself and for you. I vow to never turn a blind eye to my own shortcomings and instead face them head on knowing our individual growth is part of tending to our union.

Of course, I also vow to have fun. I promise to keep laughing at your jokes as hard as I laugh at my own, and sometimes harder. I promise to keep going on adventures and to balance leaping before we look and looking before we leap!

I love you so much and can’t wait for this next chapter. taken in Los Angeles, California by @mattruscigno

A #diadelosmuertos alter for a family dog named Sandy, in a bar, in a cave, on a tequila distillery / farm.
She even has a little taco stand (vegan options!) named after her.
Swipe for more dog photos, including a zoom in on Sandy, and some shots (zing) of the town of Tequila, Jalisco.

Don’t mean to turn this into a European travel blog but I’m trying to post when I do stuff.

Def inspired by friends @sayward and @tajlucas adventurous posts.

I got my first #errorfare thx to @escape_losangeles: $250 RT tickets so jumped at the chance to hit new countries, including my 50th. Never been a checklister / type A but random lists can help when motivation is low? #seeeverycountry ?

1. Slovak Radio Tower. People call this ugly!?

2. @vegan_pub; chill local spot where I happen to be able to eat everything. FYI if you aren’t Slavic: a ‘cheeseburger’ is not a burger with cheese.

3. All these trains warm my #numtot heart

4. There must be epic mtb-ing in Slovakia cause lots of riders look like this.

5. I take so many housing/transit photos I could make a dedicated IG (tho we all know I’d never post)

6. More unexpected fried #vegancheese. Super nice people at @balansbistro.

7. I just love using the wide angle function okay?

8. Skater Girls; working mailbox.

9. If there’s #bougiecoffee I can find it. good times at @good.times.coffee.roasters

10. See above but #vegandonuts #holefoodplantbased

Thx for looking if you got this far. Or even if you didn’t.

Thinking about Rome, December, 2022.
Got a deal and for once just went to one city! If you don’t count the nights in London and SF needed to get the deal.

1. Trastavere things in #Trastavere
2. In honor of going to Gramsci’s grave I dressed as someone who would go to Gramsci’s grave
3. @lgraves fist bumping the friend she color coordinated with. #fashion
4. Giant donut, a croissant, and espresso, served by people who look like me.
5. Pizza!
6. The Borghese was sold out, but only if you wanted to go in the entrance.
7. Pizza!!
8. They love old-ass fountains
9. Thx to combining two #Amexdeals we stayed in a $2500 Waldorf-Astoria room for a few hundred dollars. Beautiful! Tho the food sucked.
10. Pizza!!!

This grocer in a small town in Switzerland, about the size of the @cityofeastonpa, had so many vegan products! Swipe, duh

This doesn’t include the fresh bread or premade pretzel bread sandwiches. 🤤

Switzerland is crazy expensive so we lived off grocery stores and sandwiches and let me tell you we did not suffer.

If a town of 25k in a country that prides itself on dairy can have all this, why can’t more places?

As this is a ‘Paris-Brest-Paris year’ and the quadrennial event that started in 1891 kicks off this weekend, I’m thinking about my own experience in riding the 1200km (~750 miles) in 3 days a bunch of years back. What a time!

Two weeks previous I had finished my first iron distance, the beloved Norseman @nxtri in Norway.
Honestly I don’t think I knew what I was in for with either event. P-B-P is non competitive but there are strict time limits. But with thousands of riders it’s a joy pedaling across France and back. I didn’t unclip for the first 85 miles! It was like the fastest critical mass ride ever.

My plan was to ‘ride fast, sleep hard’ and I committed to it by getting almost a full night sleep, twice! It confused the French at the control points (where cots were set up) when I told them when I wanted to be woken up. I’m even in the documentary about it when I’m the only person still in a room sleeping while everyone else had gone 😂.

I survived on delicious French bread and the vegan pâté that comes in what looks like toothpaste tubes. Didn’t have to look at my route sheet once.

Thinking about everyone heading out shortly and wishing them well. Remember this is for fun! That was lost on the few Americans I met when I rode it who were all miserable and had flights scheduled for the day after it ended 😟.

Also RIP Fat Dan, the only person I knew doing it beforehand. Will never forget him and his also-artist wife guiding me through the Louvre the day after, where I had to sit down cause I got tunnel vision from lack of food and sleep. Art!

Mexico City, October 2021.
@lgraves and I got engaged 🫶🏼
Rode the Xochimilco boats with our Spanish classes
Ate incredible food (s/o @wearelosloosers)
I went to Six Flags with Gen Zers from my class and I’m pretty sure no one thought I was their dad
Enjoyed the fantastic pedestrian, cycling, and walking infrastructure even if the young kid pictured isn’t stoked. #CDMX taken in Parque México Condesa by @mattruscigno

The #Badwater135 ultrarun is happening rn (go @harveylewisultrarunner!). I’ve had the privilege of working this race many times in the past, including when @scottjurek won and when @davidgoggins first ran (got to help him with some bike riding tips during #FurnaceCreek508 around then too).

Here are some of my favorite photos. It’s always an exhausting blur just being out there for 48 hours, trying to stay hydrated, sleeping in the car, plus working; can’t imagine running. Good luck to everyone racing this year!

1. Badwater!
2. A runner climbs Towne Pass (I once hit 62 mph descending this on my bike 😬)
3. Towne Pass
4. The hydration game
5. This dude always runs in a tutu
6. Trying to eat healthy in the heat
7. Runners bunched up near the start
8. Father Crawley Pass, after Panamint Springs, imo is one of the toughest parts of the race. taken in Death Valley National Park by @mattruscigno
