So many variables making sourdough bread, one of the most useful things to see is how the dough changes as fermentation happens so you know you are on the right track! Every time is different 😂 while it takes place over a big window the hands on time is just a few minutes here and there so easy enough to fit into a WFH day. Drop any questions in the comments.

Sourdough Bread Recipe

1. Ingredients: 650g flour, 455g water, 130g starter, 13g salt.
2. Mix: Combine flour and 3/4 water. Mix and Autolyse for 15 mins.
3. Add: combine starter and remaining water and salt. Add both to shaggy dough and incorporate.
4. Bulk Ferment: Cover and rise 5-7 hrs, stretch and fold during this period at roughly 30 min intervals. Until you notice bubbles and rounded edges. This bit depends on room temp and how active your starter is as to when it’s ready to move on.
5. Shape: Form loaf, rest 15 mins.
6. Proof: Place in proofing basket, cover, and proof overnight in fridge. 12-24 hours.
7. Preheat: Heat oven and Dutch oven to 500°F (260°C).
8. Bake: Score dough, bake covered at 500°F for 25 mins, then uncovered at 450°F (232°C) for 18-25 mins until browned.
9. Cool: Let cool a few hours before slicing else you get gummy bread. by @mayan
