The tamper must stay perfectly perpendicular to the basket base, creating a flat, even and dense coffee puck.

A correct and consistent tamp is essential because:

• It prevents channeling – water takes the path of least resistance and extracts unevenly.
• It ensures a balanced extraction, rich crema and consistent taste in every shot.
• It makes your espresso repeatable, shot after shot (it’s not about exact kg of pressure, but about the same reliable technique every time).

A crooked or uneven tamp ruins even the best coffee.

Proper technique = quality espresso.

☕️ Friends, my world as a specialty coffee barista is a ritual of connection and precision.

Here are the key steps, captured in photos: from chatting with you to perfect service.

1️⃣ Customer-Barista Interaction
A smile and chat (photo 1) build trust and personalize every cup. It’s the heart of sharing!

2️⃣ Balanced Grinding
Right grind size (photo 2) releases aromas in harmony: perfect acidity, sweetness, and body. I listen to the bean!

3️⃣ Even Leveling
Smoothing the grounds in the filter (photo 3) ensures uniform water flow. No uneven zones!

4️⃣ Proper Tamping

🧪 The most useful gift I could have received? The fragrance kit of coffee defects.

On June 18, 2026, I attended an intense and incredibly insightful masterclass on coffee defects at Mane SA headquarters.

Today, their gift arrived at my door: the complete set of aromas we studied.

Here’s a quick breakdown of each “enemy” of specialty coffee:
• Phenol: Medicinal, band-aid, or chemical smoke aroma. Often caused by contamination during processing or contact with unsuitable materials.
• Potato Skin: Earthy, raw potato, or wet soil scent. Typically the result of bacterial infection on the coffee cherries while still on the tree.
• Acetic: Sharp vinegar smell. Develops from over-fermentation or uncontrolled fermentation during washing or post-harvest.
• Musty: Moldy, damp basement, or stale odor. Usually due to incomplete drying or poor storage in humid conditions.
• Vegetal: Grassy, green herb, or fresh-cut grass notes. Common in underripe beans or beans that didn’t develop sugars properly during roasting.
• Papery: Wet cardboard or old newspaper smell. A clear sign of oxidation, aged beans, or improper storage.

Having these pure fragrance references allows me to train my nose daily and instantly recognize these defects during cupping.

Il y a un an,

nous ouvrions les portes de Universe Specialty Coffee sur le Boulevard du Pont-d’Arve.
