The last three months of the year have a way of filling your calendar before you get a chance to look at it. Q4 deadlines, holiday travel, and earlier sunsets all start pulling from the hours that used to go to grocery runs and Sunday prep. This week’s menu is built for that stretch. Every lunch and dinner delivers 30-65g of protein, balanced with 25+g of fiber daily and about 165 different plants weekly, with nothing for you to plan, cook, or track.

Peach season has packed up for the year, but this jar holds onto it a little longer with a bourbon and maple compote. The gingersnap crumble on top tastes like the first cold morning of fall, and 13g of fiber gets you more than halfway to the day’s 25g before you’ve left the house.

Oregon grows nearly every marionberry in the world, and here they share the compote with blackberries for a tart, earthy sweetness. Chai-spiced granola adds the crunch, and 30g of protein makes this the rare breakfast that keeps pace with lunch.

Most ketchup gets its sweetness from sugar or corn syrup, so ours starts with smoked beets instead and skips refined sugar entirely. It ties the jammy eggs, pastured turkey bacon, and caramelized squash together into a 30g protein breakfast that heats in under five minutes before your first meeting.

Cacio e pepe usually means white pasta buried in cheese, but ours twirls just as well on pink sweet potato noodles in a peppery sauce finished with truffled pine nuts. The plate carries 37g of protein and 12g of fiber in 448 calories.

Our grass-fed beef bourguignon is braised low and slow until it pulls apart with a fork, then spooned over a silky cauliflower and cannellini puree. With 43g of protein, it’s a Sunday supper you can have any night of the week.

New this week, our salmon is pan-seared until the edges crisp, then finished with a peppery au poivre sauce that’s silky enough to drag every potato through. It brings 32g of protein to the table in under five minutes, even on the night your last meeting runs long.

Julie’s Ginger Shallot Chicken Soup

85g diced chicken breast
2 cups chicken bone broth
1 inch chopped ginger
3 tbsp chopped shallots
½ cup chopped frozen spinach
50g black caviar lentils
3 shiitake mushrooms
3 asparagus stems
Sea salt
Fish sauce
Juice of ½ lime
Cilantro
Scallions

The season turns and so does your appetite, from salads toward warm bowls. This week’s menu follows this natural shift with meals built from the first autumn harvest. Every ingredient is weighed to the gram and in the Methodology kitchen within 48 hours of being picked, when produce carries the most nutrition. Every lunch and dinner still lands between 30-65g of protein, with 25+g of fiber daily, and ~165 plants across the week so you’re stepping into a new season nourished and feeling your best.

Cacao nibs go in whole rather than melted, so they stay crunchy against the raspberry lime jam and the almond butter underneath. The jar packs 27g of protein and 15g of fiber.

The red lentils and chickpeas cook down into the tomato and red pepper stew, which is how a breakfast reaches 35g of protein and 10g of fiber.

Brussels sprouts and apples are roasted together and the delicata squash is caramelized. The bowl carries 33g of protein and 12g of fiber for 437 calories.

Goan curry builds on coconut and tamarind instead of cream, so the sauce stays loose enough for the cod to hold its flake, and the bowl delivers 41g of protein.

This is the plate you want when you get home hungry. Crisp golden potatoes, grass fed beef braised until it falls apart, and enough aji verde to dip both into, at 45 grams of protein.

Spaghetti and meatballs, with enough marinara to coat every strand and pistachio parmesan on top. The chickpea and lentil pasta is what gets the plate to 47g of protein and 15g of fiber.

Pan seared salmon with roasted blush radishes and mustard aioli to pull it together resulting to a balanced plate with 34g of protein for 467 calories.

The first chilly day makes this the obvious choice for lunch or dinner. Roasted chicken shredded into ginger and turmeric broth with chickpea and lentil noodles, and the bowl carries 50g of protein and 14g of fiber. by @methodology
