Fregola, the beloved Sardinian pasta, is small, hand-rolled, and toasted to a nutty perfection, soaking up flavours like no other. For this dish, I use a clay baking dish, spreading fregola across the bottom. I add diced sweet onions, fresh minced garlic, followed by a pinch of sea salt and freshly cracked black pepper. A rich, homemade stock—vegetable or chicken—pours over, infusing every grain. I place a block of briny feta on top and bake until the fregola absorbs the liquid, the tomatoes turn sweet with a crisp, caramelized edge, and the feta melts into salty richness. The result is a harmonious mix of textures and flavours, perfect for sharing with crusty pane carasau or ciabatta.
For dessert, I serve fresh strawberries, macerated with a touch of raw cane sugar, a grind of black pepper, and a drizzle of aged Modena balsamic vinegar, creating a vibrant, tangy-sweet finish that complements the meal beautifully.

Ribollita, meaning “reboiled” in Italian, is a hearty and soulful Tuscan soup that embodies the essence of rustic Italian cooking. Originally born out of necessity, this dish was created by reheating leftover vegetable soup and thickening it with day-old bread. Despite its humble origins, ribollita has become a beloved classic, celebrated for its comforting flavors and rich texture.
This savory soup begins with a soffritto—a fragrant base of onion, carrot, and celery—sautéed in peppery olive oil. Cannellini beans and Tuscan kale (cavolo nero) bring earthy depth, while tomatoes add brightness to the broth. A Parmesan rind simmers in the pot, infusing the soup with nutty, savory richness. The addition of rustic bread transforms the dish into a creamy, stew-like masterpiece.
Ribollita is more than just a meal; it’s an experience that gets better with time. Reheating enhances its flavors, making it even more delicious the next day. Serve it with toasted bread for crunch or drizzle with extra virgin olive oil for a luxurious finish. Perfect for chilly days, ribollita is a celebration of simple ingredients elevated to culinary greatness.

the last couple of days, I’ve had the extraordinary opportunity to immerse myself in the world of some of the most outstanding products and producers entered in this year’s competition. It was a profoundly enriching experience to serve as a judge at the Great Taste awards, a role I accepted with great honor. The competition was intense, and making decisions was anything but straightforward, underscoring the high caliber of entries we were privileged to evaluate.

The Great Taste awards stand as a shining beacon of the immense talent and unwavering commitment of independent, small-scale producers in the food and drink sector. In my capacity as a judge, I was given a unique chance to support and acknowledge the immense effort and passion poured into crafting these extraordinary products. It felt incredibly rewarding to contribute to an event that shines a spotlight on the creativity, innovation, and excellence of these small enterprises.

Navigating through the tasting and evaluation process was both a challenge and a deeply fulfilling journey. The diversity and exceptional quality of the entries were nothing short of breathtaking, making it a joy to appreciate the artisanal skill and meticulous attention to detail evident in each product. The difficult decisions we faced only underscored the remarkable quality of the submissions, and I am deeply honored to have been trusted with such a significant responsibility.

Reflecting on the experience, the time I spent judging at the Great Taste awards has been nothing short of extraordinary. I am immensely thankful for the chance to support and celebrate the incredible efforts of independent, small producers in the food and drink industry. The passion, creativity, and commitment demonstrated by these skilled individuals are profoundly inspiring. I am humbled and proud to have contributed, even in a small way, to acknowledging their remarkable achievements. Thank you @guildoffinefood for having me as a judge, I enjoyed myself immensely.

My best friend @lili.w.p told me I had to post this photo, so here it is.
Gut health is a big deal, especially during the holiday season when we’re surrounded by all the festive feasting and merrymaking. I mean, come on, it’s a time of year when gluttony becomes a legitimate hobby! To keep my tummy in check, I’ve got my top-secret stash of homemade kombucha. This stuff has been fermenting for a solid two weeks, then I jazz it up with some zesty lemon and feisty ginger – a combo that’s been through more taste tests than I’d like to admit. Trust me, it’s the winning ticket. I pop it in the fridge to let those flavors mingle and, voila, my own potent potion is ready to rock. And let’s just say, it’s so punchy that it doesn’t need to sit around for ages. @zoe Oh, and in the midst of all this, my furry sidekick @mabelle.wiredach decided she’s the star of the show – typical!.

I have to admit, I wasn’t much of a Christmas cake fan before, but oh, how things have changed! My mother rarely baked at home, except for the occasional coffee & walnut cake for a “Bring & Buy” or a Paris~Brest for her dinner parties. However, everything transformed when I studied at Leith’s School of Food & Wine. The recipe is also courtesy of @leithscooking
This cake is a true delight, bursting with the magical flavors of Christmas. It’s unbelievably moist, and the fruit stays afloat as if by magic, giving it a wonderfully light texture despite being packed with fruit. The fruit takes a luxurious whisky bath for 24 hours before the two-hour bake.
These cakes are a small token of appreciation for what has been an absolutely fantastic year. Here’s to an even more amazing year ahead! Can’t wait to see you next year! #christmas #christmasbaking #cakes #thankyou #family #friends #leithsdiplomalife #recipes #foodporn #foodphotography #food #foodblogger #foodstagram #foodgasm #foodpics by @michelegirault

I longed for a meal that excluded meat or fish, opting instead for a comforting dish centered around vegetables, specifically potatoes. Allow me to present my take on a Greek-inspired potato salad: tender, sweet salad potatoes, gently steamed, enhanced by the briny charm of capers, the richness of Kalamata olives, and a selection of freshly harvested garden herbs, roughly chopped. To unite these flavors, I’ve added thinly sliced red onion and a delightful Dijon dressing. While the potatoes are still warm, a drizzle of caper brine infuses them with flavor before being combined with the dressing and served. Voilà!”.
