No-Churn Cashew Date Ice Cream

For the ice cream

* Cashews, soaked in water
* 5 dates, soaked in hot water
* Coconut milk
* A small splash of vanilla extract
* A pinch of Celtic sea salt

For the date caramel

* 6 dates, soaked in hot water
* A little almond milk
* A pinch of salt

To serve

* Walnuts
* Banana chips
* Date caramel

Method

Start by soaking the cashews in water and the 5 dates in hot water.

Drain both and add them to a blender together with coconut milk, a small splash of vanilla extract and a pinch of Celtic sea salt. Blend until completely smooth and creamy. This is your ice cream base.

Pour the mixture into a container, cover the surface with cling film and place it in the freezer to set.

For the date caramel, soak 6 dates in hot water and drain. Add them to a bowl with a little almond milk and a pinch of salt. Blend with a hand blender until smooth and creamy, adding a little more almond milk if needed until you reach the right consistency.

Serve the ice cream with the date caramel, walnuts and banana chips.
