Guess what?! 🎉 We’re opening a second Milpa location!When we opened our doors in 2021, it was in the middle of the pandemic. There was so much uncertainty, and we honestly didn’t know if we’d make it.But we stayed true to what mattered most: heirloom, stone-ground masa, fresh ingredients, thoughtful hospitality, and food made with care. Most importantly, we’ve been incredibly fortunate to have a loyal team that believed in our vision and chose to grow alongside us.None of this would have been possible without our staff, our guests, and everyone who has supported Milpa from day one. It’s a labor of love, and it all starts with corn.Such a simple ingredient has the power to take you back to your childhood, to a memory, to a time when doing something simplest meant the most. Rising Star Restaurateur DJ Flores (@dnflores7) grew up in Las Vegas, Nevada, and built his early kitchen career moving through some of the city's most recognizable addresses — Mesa Grill, Border Grill, Dos Caminos at The Venetian, Jaleo, and eventually Joël Robuchon, where he pivoted from Latin and Spanish cuisine into French. A stint in the pastry and bakery department at Caesar's Palace came next.⁠⁠In 2015, Flores staged at Quintonil in Mexico City, Mexico, and came back to Las Vegas with masa on his mind. He bought a molino and started selling to local restaurants, but permitting issues and costs forced him to wind things down. He returned to the kitchen, spent time at The Bazaar, and became executive sous chef at Lorena Garcia's Chica. When the pandemic hit, he saw the opening he needed. Milpa (@milpa_lv) launched in Spring Valley in 2021, built around in-house nixtamalization and a menu that pushes Mexican cuisine past what most of Las Vegas expected from it. In 2025, he opened Nocturno (@nocturno_lv), a minimalist bar in the Arts District.
