Hi Folks!
We are really excited for what this season brings to Mingle + Graze.

While our store hours are limited to lunch service (11a-3:30p) our reach to our community is now far greater🎉

This opens up our availability to large format catering events (we are booking left and right🌪️), we have pop up dinners coming soon—starting with a special Cheese Omakase event (stay tuned).
Mingle + Graze is also now available for evening space rental. If you’re looking for an intimate space to host holiday events, book clubs, or community events—we can fully take care of you!

It’s important to us to keep you informed, especially because we’ve been getting calls, DMs, and walk-ins asking the same question:

Where is the @beemstercheese Pumpkin Spiced Gouda?! 🎃🧀

Here’s what happened.

Over 8 years ago, we were the first to bring this cheese to the Phoenix Valley—before you could find it in supermarkets or pretty much anywhere else locally. Since then, it’s developed a little cult following of its own. Every September, people come from all over the Valley just to grab a wedge from us.
We also market our collaboration with local breweries and other businesses around this cheese.

Our cheese loving community really matters to us for reasons beyond selling cheese.

Those customers come to Mingle + Graze, but while they’re here, they walk around Downtown Chandler. They shop, eat, grab a drink, and discover our neighboring businesses.

We may be small, but our impact isn’t.

This cheese has to be pre-ordered 8 months in advance. We ordered 4 wheels knowing that we typically sell through 3 of them within the first 3–5 weeks after it arrives in early September.

Unfortunately, despite planning and placing our order months in advance, our distributor allowed our entire allocation to be sold to a corporate restaurant group.
To be clear, my sales rep did everything right and I made sure the distribution company didn’t point a finger at them.

To say we were disappointed is an understatement.

For a small, independent cheese shop like ours, something like this impacts us more than it would a large restaurant group. We spend years introducing products to our community, educating customers, creating excitement around them, and building traditions people look forward to every year.

So for everyone who has called, messaged, or walked in looking for your Pumpkin Spiced Gouda—we hear you. We’re disappointed too.

This won’t stop us from bringing in excitement around cheese. 🧀 Now more than ever, our cheese makers, creameries, dairy farmers need us the most and we will continue to spread cheese love.

🐑Manchego🐑
It’s a beautiful cheese from the La Mancha region of Spain 🇪🇸⚽️🏟️
Spain’s most famous cheese. Also from the same region associated with Don Quixote.
Our case currently has 4 month aged Manchego.
Made from the milk of authentic Manchega sheep.

Sheep farming and cheese making in La Mancha go back thousands of years. Think Bronze Age period👴🏼👵🏼🥉

Why Manchega sheep? The La Mancha region has crazy climate vibes. Really hot summers, really cold winters, and barely any vegetation.
The people of La Mancha turned to cheese making because fresh milk didn’t last long enough, cheese can be aged and stored to provide food for months to come during the harsh weather season.

Back to eating Manchego: it’s nutty, savory, creamy, and earthy. Just what you need this week!
