Basic & Classical Cakes • From conquering my fear of unevenly torting cakes to correctly aerating buttercream, this class was a blast. One of my favourite parts was the amount of practice we got with piping. We learnt so much about what it means to eat a bite of the perfect cake and the intricacies that come with it, including the ratio of the cake sponge to frosting as well as the flavour and textural components. We also brushed up on tarts, mild marzipan work and the timid nature of whipped cream. “Once you go butter, you can’t go un-butter.” #WhatWouldChefEganDo . . 🏷 wedding, carrot cake, strawberry, lemon meringue tart, caramel by @miscellany.jm
Here’s some of my work from semester 1, where I learnt the fundamentals or “fundies” of baking. I was able to strengthen my skills in the basics, covering several techniques and methods, along with the science behind each. #bakeshop1 . . 🏷 croissant, puff pastry, pastry cream, lamination, buttercream, food photography by @miscellany.jm

Meringue cookies are absolutely festive. They’re light as air and melt in your mouth. What’s even better is that these are eggfree!😍 They’re a perfectly delicious treat and they’re even cuter in the shape of little snowmen wreaths and Christmas trees. ☃️🎄❄️ It’d truly be a Christmas miracle if they last more than a day at home.✨ by @miscellany.jm
Originally from Linz, Austria, Linzer cookies are made with flour, nut meal of choice, spices and egg yolks. However, these Strawberry Almond Linzer cookies in frame are eggfree! 🥳 Each cookie has a tangy, fresh strawberry jam sandwiched between two layers of crumbly almond short-crust pastry. It’s COMPLETELY different from Jim Jam, as they are biscuits (not cookies; yes, there IS a difference) and also have icing and sugar crystals on them. 🙂 Linzer cookies vary by filling and lattice of choice, and since it’s a Christmas staple, I just couldn’t skip this one! 🤩❤️ by @miscellany.jm
These Raspberry New-York Style cheesecake bars are honestly so perfect. (Yes, I used raspberry again)🥰 The crush is golden, crunchy and sweet; the filling is so indulgent and creamy, and literally ADDICTIVE. 🤭 I didn’t use the water bath method for this recipe and I’m so happy with the final result, especially since it’s eggfree. 🥳 Stay tuned for crazier eggfree confections coming your way soon! 👀 by @miscellany.jm
