Happy Pumpkin Day!! When I did my meal planning for this week, I wasn't aware that today was National Pumpkin Day!!! So I bumped our Pumpkin Supper up to tonight 🤪

Pumpkin Chilli
1 Medium Pumpkin
1 lb Ground Beef
1 Medium Onion chopped
1 Red Bell Pepper chopped
3 Garlic Cloves minced
2 tsp Cumin
1 1/2 TBSP Chili Powder
1 tsp Salt
3/4 tsp Pepper
1/4 tsp Cinnamon
2 1/2 -4 cups Chicken Broth
2 (15oz) cans petite diced tomatoes not drained
1 (15 oz) can kidney beans drained and rinsed
1 (15 oz) can Black Beans drained and rinsed
1 (15 oz) can Pumpkin purée

Preheat oven to 350°
Wash and dry your Pumpkin. A medium sized one should work fine. Mine was a tad large.
Gut the Pumpkin and coat the inside with oil. If there is a stem on the Pumpkin wrap it in foil. Top the Pumpkin and bake for 15-20 minutes with lid on. Then remove the lid and continue to bake another 10-25 min.

While that is baking make your Chili. Brown the Ground Beef. Add in onions and pepper and cooke for several minutes. Add seasonings and mix well. Add minced garlic and cook till fragrant.
Add in the diced tomatoes, beans, broth, and Pumpkin. Mix well. Bring it to a simmer for 15-30 min. Carefully add the chili to the Pumpkin, return the lid and cook another 20-30 min. Watch that your Pumpkin doesn't get to soft!!!
Serve with sour cream, shredded cheese and Cornbread!!😋

He got his free goodies from Food City (if you have one near you add your chillens to your card and they will receive a pamphlet of coupons for their birthdays!!!) He requested BBQ Sliders and Mac and cheese for supper, then afterwards we went and spent time in Nature. 🤩💙 Thankful we live so close to so much wonderful Nature options!!!! (EDITED TO ADD- i allowed him to pick the audio for the video so thats his choice 🤪😎)

Its a beautiful foggy morning here in our neck of the woods in Tennessee 🧡
I tried a new recipe for Blueberry Pancakes 🫐🥞 it turned out amazing!! 😋
As I was making breakfast I noticed this spiderweb on one of our vehicles. I snapped the first Pic from the house. After breakfast I went out and got some closer pics. There was the smallest breeze so it was hard to get it to focus....but I think I got a couple good shots. It was stunning!!! I love how each little bead of dew makes it look like jewelry 😊 🕸
I would have never imagined i would snap a pic of a spider web and call it stunning, considering my hatred for spiders 🤪😂🫣🫣 by @misrach91

I love supporting local businesses. I needed some tomatoes for meals next week so made a stop at Amburns Market in Maryville TN. A beautiful market with fresh produce, flowers, bread, jams, milk, meat, eggs, candy, lotions etc!! if you are in the area definitely stop in!! by @misrach91

The bluebirds took up residency in a birdhouse that was here on the property when we moved in. We cleaned it out...and they put it to use!! I heard a commotion outside...turns out a squirrel was headed up the pole, the bluebirds made a fuss and bombed it a couple times and it quickly fled to the woods 🤣 The pics and video were taken through the window so maybe not the best quality.
