Jamie North (@jamie__north), a third-generation restaurateur and passionate foodie, has played a defining role in shaping Ashland’s culinary and coffee scene. After co-founding the acclaimed Amuse restaurant at just 23, North established Mix Bakeshop (@mixashland) in 2006, featuring artisan pastries, handmade ice cream, and a partnership with Stumptown Coffee Roasters.

Soon after, Lily Hudson (@lilyroxannejuly) joined the team, and under her bakery leadership, Mix quickly became an institution for those seeking a fresh baguette or a perfectly baked croissant.

In 2018, they expanded their vision with ReMix Coffee Bar (@remixcoffeebar), featuring a savory food menu and pastries baked and delivered daily from Mix Bakeshop. Their influence extends beyond the bakery; Mix and ReMix have become cornerstones of Ashland’s community, where regulars and first-time visitors alike feel a sense of belonging. Whether through a lovingly crafted cappuccino or a warm greeting, they have cultivated spaces with a culture of excellence, warmth, and genuine hospitality.

As we close out our 18 years celebration, we also wanted to give a huge shoutout to all the folks that helped us achieve our remodel last year. While we still have a few tricks up our sleeves, the recent arrival of our new patio tables was the cherry on top for the major changes we planned.

We are so so happy with how this latest primp turned out and can’t thank the local businesses, artists, contractors, etc. enough who were a piece of that. ❤️ taken in Mix Bakeshop by @mixashland

When everything is going great but then you drop your ice cream… but THEN! you realize it's right there in your lap, and you can just pick it up and CARRY ON!

* This whole sequence was taken downtown Ashland Oregon during First Friday through the window at Mix. Special thanks to @hoshizora_kinako for keeping us all thoroughly entertained.
