My love language is Staff meal❤️‍🔥
I’m sharing my recipe for Miso Mochi upside down cinnamon rolls using @mochifoods pancake mix!
Suuuper gooey, chewey and addictive.

Be sure to follow @mochifoods for some fun surprises we’re working on this Fall!

300g Mochi Foods Mochi pancake mix
200g Bread flour
11g salt
55g sugar
15g Active Dry yeast
2g Cinnamon
1g Nutmeg
250g Eggs (Cold)
5g Vanilla
120g Butter, room temp

Combine all the dry ingredients, the milk and the eggs in the bowl of a stand mixer fitted with the dough hook. Mix on medium/medium high speed for 10 minutes until the the dough is elastic and passes the windowpane test.
Gradually add in the soft butter in increments until you are left with a bouncy dough. Cover and allow to rise for 1 hr. Punch down and fold. Chill overnight.

Miso cinnamon filling
200g Butter, room temp
300g Brown sugar
5g Cinnamon
3g Nutmeg
4g Green Cardamom
20g Miso

Combine all filling ingredients in a mixing bowl and mix until well combined.
Turn cold dough out onto a floured work surface. Roll out to rectangle about 14”x 6”. Place the filling in the center and spread out evenly with a spatula. Carefully roll the rectangle into a log and gently close the seams. Cut the log into 9 equal pieces using a bread knife or dental floss. Place the cut pieces onto a greased 9” x 13” pan. Cover with plastic wrap and allow to rise for 1-1.5 hours at room temp or until the rolls have almost doubled in volume.
Pour a teaspoon of heavy cream over each roll before placing it in a 350F oven for 30 minutes.
Remove the rolls from the oven and immediately flip the baking pan over onto a lined sheet pan. Serve warm OR top with miso cream cheese frosting for extra gooeyness!

Bonus: Miso Cream Cheese Frosting
250g Cream Cheese, Room temp
150g Butter, Room temp
15g Miso
275g Powdered sugar
The zest of 1 orange

Combine all ingredients in a stand mixing bowl and cream with a paddle attachment until smooth. Top cinnamon rolls while warm for a gooey and glazed roll, or top after cooking for a more polished cafe style roll.

Happy Baking!
