What a crazy, momentous year. Yeah it’s my birthday today but boy did we go through a lot, wifey and I. Transplanted organs, weddings and babies. That sums up our year. Putting life in to perspective with @rseiger60 having her double kidney and pancreas transplant almost a year ago has put a new measure on what’s important in my world. I have not been on Ig much lately for the simple reason real life got in the way—my wife recently had a transplant and is now the recipient of a new kidney and pancreas. There is a long road to recovery but she’s doing better and takes a lot of my awake time. Keep her in your prayers. Here is a dish called summer eggplant parm. Slices of eggplant are grilled not fried with a topping layer of browned panko flakes, garlic, low salt/sugar @yomamasfoods tomato sauce and fresh sliced basil 🌿 and mozzarella melted on top in a pan with @garciadelacruzoliveyou EVOO. Salmon bites with zucchini over basmati rice. The marinade is the key. I used @mikeshothoney @thedatelady sweet chili sauce, sesame oil, mirin, a dash of dark soy sauce, a tsp of @chilecrunch to spice it all up and a healthy sprinkle of @traderjoes everything bagel seasoning. Sautéed in a hot pan for 5 minutes and then made crispy in the air fryer for another 5. Recipe available by DM. So good!
