Welcome to the neighborhood, Moss Culinary Studio! 👋

Moss hand makes every baked good and sweet treat you’ll see in their space. From the brown butter chocolate chip cookies to the seasonal fruit galette, and the sandwich on focaccia to the chilled beet soup. 🫜

You may have seen them at the Farmer’s Market, but now you’ll have to see their storefront. You’ll see Katie and Cody working the counter, making the goods, and welcoming each person in.

New sando alert!! The Golden Beetle is a nutty, creamy and bright sandwich, packed with flavor. We layer pickled golden beets over a smear of whipped feta, add some herbs, arugula, hazelnut vinaigrette, and a dusting of Dukkah.

No beetles were harmed in the making of this sandwich. 🪲

As with all things on our menu, it’s here for a good time, not for a long time. Our new yogurt and granola bowl is something special. We are we roasting local peaches, making a bright and spicy ginger granola and topping it all with fresh honeycomb from @beeloved.farm

Starting this week, we will be open later! We see you standing outside, checking the time on your phones and watches as we lock the front doors and wipe down the tables. Heard! We want you to be able to have that late lunch, to grab that sandwich on the way home from work, so we are adjusting our hours. Now opening at 9am and staying open to 5:30pm! See you soon!

Everyone’s favorite sandwich, which will change based on what’s available from the local farms. Right now we have a white bean purée, fresh @upriverorganics cucumber, shredded @barehands_organicfarm carrots, pickled red onions, @eugenemicrogreens greens, fresh herbs, edible flowers from @doom.bloom.garden and carrot top chimichurri sandwiched between our famous farmers market sourdough focaccia. This sandwich is packed with flavor and we’ve been hearing that it’s one of the best vegan sandwich in town.

Hosting a weekend brunch just got easier. You can now preorder quiche for pickup on Saturday, July 11th. This week, @willowandoakfarm eggs will be making friends with Gruyère, spinach, and herbs. Our quiche in baked in glass Pyrex which ensures a golden bake, reheats perfectly, and is more sustainable than single-use aluminum tins. We do add a $5 deposit for Pyrex dishes. We love our local farmers!! There are a lot of new people here in our grams. For those who are new to us, we started at the Lane County Farmers Market before deciding to open a brick and mortar. Willamette Valley has some of the most unbelievable ingredients and unbeatable produce. I am always in awe of the quality and abundance they bring to market every week. Not all flours are not created equal and switching one of your primary flours can be a bit tricky. We are always trying to find more sustainable, local ingredients that offer better flavor to our dishes. Today I’ve been testing out @cairnspringmills Glacier Peak flour as a replacement for our current bread flour. So far, the results are promising! taken in Eugene, Oregon by @mossculinarystudio

Hello Eugene! We are so happy to put away the hammers and tie our apron strings again. Our new location is right in the middle of downtown (992 Willamette Street), open Wednesday - Saturday, 7:30am to 3pm.

Thank you to everyone who has already come to the start our soft open. We have already learned so much about working in this new space and about some of our new (to us) equipment. Please come see what we’ve spent the last four months building. You’ll find some of the familiar sweet and savory baked goods as well as sandwiches, soup, and a couple of breakfast options. We can’t wait to make you something delicious

This corner of downtown eugene is getting a bit sunnier. ☀️ We had no idea what we were signing up for when we signed a lease in February. After months of hard work and several moments where we questioned if we would ever make to opening, the end of this chapter is in sight.

Things are starting to come together. We are putting the finishing touches on things and recipe resting. Our family and friends have helped us out throughout the process and they are such a huge part of this place.

We are counting down the days until our kitchen is up and running. Renovations are hard, but also kind of amazing! We’ve been learning so much and we are finally to the point where we get to make choices on what we want for our dream space. We can’t wait for you all to see what we are building. 💚
