Matcha protein pancakes 🍵

Light, fluffy and loaded with matcha 💚 This is dessert for breakfast that actually delivers, with around 30 g of protein in the whole stack. The perfect post-workout treat.

Ingredients

2 egg yolks + 3 egg whites
30 g plain flour
15 g protein powder (vanilla or unflavoured)
5 g MOYA Matcha Traditional
35 ml milk
15 g powdered erythritol or caster sugar
a few drops of lemon juice
a pinch of salt

How to make them

1. Whisk the yolks with the milk, then sift in the flour, protein powder and matcha. Stir just until everything comes together. Don’t overmix.
2. In a separate bowl, whisk the egg whites with the salt and lemon juice. Once they turn foamy, crank up the speed and add the sweetener a little at a time. Keep going until you have stiff, glossy peaks.
3. Stir a third of the meringue into the matcha batter to loosen it up. Then gently fold in the rest in two batches, sweeping the spatula from the bottom up so you keep all that air.
4. Warm a non-stick pan over very low heat with just a touch of oil. Spoon in 2–3 tall mounds of batter, cover and leave for 2 minutes. Top each pancake with another spoonful of batter, add a teaspoon of water to an empty spot in the pan and cover tightly.
Cook for 3–4 minutes, until the bottoms are set. Flip carefully, add a few more drops of water, cover again and cook for about 2 minutes more.
5. Serve right away with skyr, fresh fruit and a dusting of matcha.

Sweet, fluffy and seriously high in protein. Save this one for your next post-workout breakfast!

Shape small dough balls and arrange 5 pieces into flower shapes, alternating colors.

Place a contrasting ball in the center and gently flatten.

One piece of bamboo, shaped by hand.

The chasen is a traditional Japanese bamboo whisk used to prepare matcha. Its fine prongs blend the powder and water into a smooth, velvety foam.

How a chasen is made:
01 a single piece of bamboo is harvested and left to dry
02 it’s split by hand into dozens of fine prongs
03 each prong is shaved thin and gently curled at the tip
04 the prongs are woven together with thread, giving the chasen its shape

At Moya, you can choose between two chasen:
🤍 Light: 100 prongs, more flexible
🖤 Dark: 80 prongs, more durable

Which one is yours?
