November is the month the city slows down. The days get shorter and the evenings longer, and that’s the best time for tea.

Most teas brew just fine in a simple clay pot or a porcelain gaiwan, so start with what you have.
But if you love the details and want every tea to show its best side, these are the pairings worth trying. Small change, noticeable difference in the cup.

Ever wondered what your chart says about where your energy really goes? An astrologer will read it with you over tea, using Jyotish, Vedic astrology. No experience needed, just curiosity.

November called for something warm, so this one’s been on our tea table all week.

How to brew it: 7 g in a gaiwan, water at 95°C, the first steeps just 5–10 seconds. Keep going, it opens up around the third cup.

Same bush, same leaves. What changes everything is what happens in the hours after picking: how long the leaf rests, how much air it gets, whether it’s heated, rolled or left to age.

Fo Shou, meaning “Buddha’s Hand,” is a traditional oolong tea from Fujian, China, especially associated with Yongchun. Made from a cultivar with unusually large leaves, it is known for its distinctive aroma reminiscent of citron, ripe pear, and flowers.

The taste is smooth and full, with a lingering sweetness. Roasted versions offer warm, toasted notes alongside the fruity fragrance. Through successive infusions, the tea gradually becomes softer and sweeter, inviting you to slow down and enjoy its changing character. by @moychay.nl

A student once told Rikyu these rules were too simple — he already knew them all. Rikyu answered: if you can actually follow them, I’ll become your student. Which one is hardest for you? 🍵 by @moychay.nl
