I’m sure you’ve had Bánh Mì, but have you had Bang Bang Bánh MÌ? 🥖 

I N G R E D I E N T S
serves 2

- 1 lb chicken breast tenders

BUTTERMILK SOAK
- 2 cup buttermilk
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp ground ginger
- 1 tbsp ground coriander
- 1 tbsp salt
- 2 tsp white pepper

BANG BANG SAUCE
- 1/2 cup Kewpie Mayo
- 1/4 cup honey
- 2 tsp @mtthouston Sambal Chili Sauce
- 2 tsp @mtthouston Sriracha Hot Sauce

DREDGE MIX
- 1 cup all-purpose flour
- 1/2 cup potato starch or corn starch 
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp ground ginger
- 1 tbsp ground coriander
- 1 tbsp salt
- 2 tsp white pepper

- Frying oil (vegetable oil)

BANH MI & GARNISH
- 2 Bánh Mì bread/baguette
- Vietnamese pickled veggies
- Sliced cucumbers 
- Cilantro

D I R E C T I O N S

- Prepare your buttermilk soak to tenderize the chicken. Mix well.
- Submerge your tenders into the soak, cover, and refrigerate for 2-4 hours
- Meanwhile, prepare your Bang Bang Sauce and set aside
- Begin prepping your dry dredge mix, making sure you mix everything evenly
- Dredge each tender into the dry mix, back into the buttermilk and then back into the dry mix for a second coating. Shake off any excess clumps.
- Heat 4 cups (may differ with your pot, but enough to cover the tenders) of oil
- Slowly drop your tenders in and fry for 7-8 minutes or until golden brown
- Place completed tenders on a rack to drain excess oil
- Drizzle the Bang Bang sauce over tenders and toss to fully cover.
- Assemble your Bang Bang Bánh Mì and enjoy!

I’ve been on a serious cabbage kick lately. No idea why it’s so underrated because this seared cabbage swimming in spicy tahini is 🥬🫰🏽 

I N G R E D I E N T S
serves 4

CABBAGE
- 1 head of green cabbage 
- 2 tsp kosher salt
- 1 tbsp olive oil

SPICY TAHINI
- 1/2 cup tahini
- 1/4 cup rice vinegar 
- 1/4 cup water
- 1 tbsp olive oil
- 2 tbsp Brightland chili olive oil or any infused olive oil
- 2 tsp grated ginger
- 1 grated garlic clove
- 1 lime (zest and juice)
- 3 tsp honey
- 1 tbsp of your favorite chili oil 

R E C I P E
- Carefully cut your head of cabbage in half
- Cut those halves again lengthwise into steaks (I made two in this video but you should have a total of 4 evenly-sized steaks)
- Drizzle olive oil and season both sides of the steaks with salt
- Get started on the spicy tahini sauce by combining all ingredients and whisking until well incorporated and you have a thick, creamy consistency 
- Heat a large pan on medium high and add olive oil
- Just as the pan begins to smoke, place your steaks in
- Sear each side for 4-5 minutes without burning (keep in mind that the steaks will soften and become flimsier, so limit moving or flipping them)
- A minute out from completing the sear on the second side, slowly add 1 tbsp of water to the pan and immediately cover. This steam will help fully cook the steaks.
- Uncover, remove from the heat and begin plating 
- Spoon the spicy tahini down. Next, add the seared steaks. Top with more tahini, chili oil and garnish with cilantro and sesame seeds.

I love, love, love mushrooms. These fried enoki mushrooms are one of the best snacks.

I N G R E D I E N T S
serves 2

- 1 pack of enoki mushrooms 
- 1/2 cup all purpose flour
- 1/2 cup potato starch 
- 1 tsp salt
- 1 tsp ground ginger
- 1 tsp baking powder 
- 1 cup cold carbonated water 
- 1 cup frying oil (I used canola oil)

R E C I P E

- Start by cutting off the ends of your enoki mushrooms. You can run them under cold water but they must be fully dry before frying
- Slice or peel off small layers/chunks of the mushrooms and set aside
- Prepare the batter by adding all the dry ingredients into a bowl. Mix.
- Add 1 cup of cold carbonated water to the bowl. Continuing mixing until all the dry ingredients are incorporated and there are no signs of clumping. You should have a rather thin consistency to the batter
- Dredge the mushroom chunks in your batter. Be sure to remove excess batter.
- Heat the oil up in a pan
- Slowly place your battered mushrooms into the hot oil without crowding the pan
- Shallow fry each side on medium high for about 1.5-2 min until golden brown
- Remove and place on a rack to allow any excess oil to drip
- To serve, garnish with Nanami Togarashi and lemon wedges
- For dipping, a quick mayo aioli with 1tbsp mayo, juice of one lemon wedge and a tsp of sriracha or any other chili sauces
