Surf & Turf Burrito. 🇺🇸🇲🇽

Smoked Pulled Beef Chuck // Ecuadorian Shrimp Rice // Pico de Gallo // Guacamole // Chipotle Crema // Refried Beans // Smoked Tallow Flour Tortilla

@myke_phillips and I tag teamed this from start to finish, and it was truly such a cool experience. Brainstorming what to make together, what and where to buy ingredients beforehand, and planning the day of the cook was a fun exercise in collaboration. It’s really easy to get caught up in your own individual routines and thought processes, so having the opportunity to do this with Myke felt like a huge, new novel experience. Spending the day with a homie cooking, spinning records, and drinking inordinate amounts of top tier coffee never sucks either I guess.

We decided to go the texmex burrito route because it called for a handful of components that would be fun to divvy up between the two of us, where all of those components would culminate in one bite when all’s said and done. We smoked a beef chuck roast Texas-style and wrapped it in banana leaves when it hit its stall to finish out (who uses tinfoil or butcher paper anymore? Sheesh. Get with the times!). And for @beaudswell and @kirabedell Myke made some of the most fire sautéed shrimp I ever tasted. Because we just had to get creative with it, we used the shells and heads to make a stock. We then used that to hydrate the rice, and lemme tell ya… that had to be the most unique Mexican-adjacent rice I ever ate. It was such a cool way to amp up the final flavors. Also worth mentioning was the use of some smoked beef tallow in the flour tortillas. Not only did the incorporation of fat make the texture of the tortillas crisp up in the pan when finished, it perfumed them with smokiness before you even went in to eat. Absolutely killer results from an absolutely killer experience!

I’d be remiss to not mention that shrimp is bugs.

I am very fortunate to attend many live music events. While the performers and music are front and centre we often lose track of the talent behind the scenes ensuring the show looks and sounds great.

Meet @myke_phillips musician, audio tech, drummer and the person you want behind the scenes. He has been at so many of the shows and festivals I attend and I have had the pleasure of seeing him in action. We appreciate you Myke! Keep the incense burning!

Big thanks to everyone who came out to @grandporchparty to hang out with us despite the vaguely menacing weather :3 Your reward was a front row seat to Carlos’ crocs
featuring @myke_phillips on drums who did a fantastic job and we are sad we cannot keep him forever

Thanks @license2chillproductions for grabbing this little clip of me playing.
I love seeing how my playing has progressed over the years. I feel a lot more relaxed and fluid behind the kit than I did a few years ago and I can’t wait to see where my playing goes next!

Hit me up for Some gigs! I’m happy playing any genre originals or covers!
