Lebanese food series continues… 🇱🇧🤎

🇱🇧 KIBBEH BIL SANIEH | كبة بالصينية 🤍

One of my favourite Lebanese comfort foods! Thin, crispy kibbeh layers filled with savoury spiced meat, onions & toasted pine nuts. 😍

✨ KIBBEH DOUGH • 500g very lean beef mince
• 325g fine brown bulgur
• 1 large onion
• Handful fresh mint
• Few basil leaves
• 1 tbsp dried marjoram
• 1½ tsp Lebanese 7-spice
• 1½ tsp salt
• 2–3 ice cubes

✨ HASHWEH (FILLING) • 400g minced beef or lamb
• 2 large onions, finely chopped
• ½ cup pine nuts
• ½ tsp cinnamon
• ½–1 tsp Lebanese 7-spice
• Salt, to taste
• 1–2 tbsp pomegranate molasses (optional)
• Olive oil

👩🏻‍🍳 METHOD

1️⃣ Soak the fine bulgur in cold water for 15–20 minutes, then drain and squeeze out any excess water.

2️⃣ Blend the bulgur, onion, mint, basil, marjoram, 7-spice and salt until very fine.

3️⃣ Add the lean beef and ice cubes and process until you get a smooth, soft kibbeh dough.

4️⃣ For the hashweh, sauté the onions in olive oil, add the mince and spices and cook until browned. Stir through the toasted pine nuts and pomegranate molasses, if using. Let it cool.

5️⃣ Grease your tray with olive oil. Using wet hands, press half the kibbeh dough into a thin, even layer.

6️⃣ Spread the cooled hashweh evenly over the top.

7️⃣ Cover with the remaining kibbeh dough, smoothing it out with wet hands.

8️⃣ Score into diamond shapes 🔪 and make a small hole in the centre.

9️⃣ Drizzle generously with olive oil and bake at 200°C for 30–40 minutes, or until beautifully golden.

✨ Let it rest for 10 minutes before serving.

Serve with laban, fattoush, pickles or a fresh Lebanese salad. 🇱🇧🤍

🤍 A Taste of Home | طعمة البيت اللبناني 🇱🇧

Khyar w Laban (خيار باللبن) 🥒💚 A simple, refreshing Lebanese classic that brings a little taste of home to every meal!

✨ Ingredients
🥒 2 Lebanese cucumbers, finely chopped
🥣 2 cups plain yoghurt
🧄 1 small garlic clove, crushed (optional)
🌿 1 tsp dried mint or fresh mint
🧂 Salt to taste
💧 A splash of cold water, if needed

👩🏻‍🍳 Method

1. Add the yoghurt to a bowl and stir until smooth.
2. Finely chop the cucumbers and mix them into the yoghurt.
3. Add the garlic, mint and salt.
4. Mix well and add a little cold water if you prefer a thinner consistency.
5. Refrigerate until chilled and serve cold.
